    Kladdkaka is an absolute staple in Sweden 😍 Something you whip up on when you need a treat immediately, or need something for your guests. I made it aaaall the time as a teenager. Thank you for showcasing it! I’d definitely add half a teaspoon of salt too, though. It makes all the difference! Deepens the flavours considerably. Love from Sweden 🇸🇪

      Yup spot on! For many of us it's the first thing we learn to bake as teenagers, because teenagers tend to crave sugar.. and if you bake it yourself your parents can't say no ;D.

    I love how she said that she'd like it with a scoop of vanilla ice cream, it's usually served with either soft whipped cream, custard of vanilla ice cream :) it's also a recipe that all swedish people know, and everyone has made it at least once. It's one of the two first dessert recipes they kids learn, and it's not uncommon for kids as young as 5 to make it almost all by themselves (parents help with the oven ofc).

      It’s also a fairly new recipe.
      It spread all over Sweden like a wildfire in the early 80s.
      Not from some famous chef or anything, but it seems like from home kitchen to home kitchen from people organically just asking for the recipe, and it then became maybe one of the most common things to bake.
      And if you had it you can see why.
      It’s huge crowd pleaser that is like a perfect mix of a brownie and a chocked lava cake, that is also really fast and easy to make.
      Now it a stable. It’s the first thing all my siblings learned to bake, and I think that is true for most kids.

      @@mjbutnotmaryjane I know a lot of people just skip the egg. And that have been the best eggless kladdkaka I have personally tried. One with the vegan ‘no-egg’ substitute product was also good.
      Skipping the egg does affect the end product a little bit, but its meant to be a gooey cake so It isn’t as affected as other cakes. And the taste is more or less exactly the same.
      While egg substitutes have a tendencies to affect the flavour a bit to much. Ones ive tried with banana and apple sauce as a substitute for the egg was not anything like a kladdkaka, but more their own cake.

    Yay! When I and my brother were little, we had an au pair from Sweden. She used to make Kladdkaka for us. It’s been many years, and we still use her recipe and I absolutely love it! Kladdkaka has a special place in my heart.
    Kladdkaka
    Ingredients:
    100 g / 3,5 oz of butter
    3 dl / 1 1/3 cups of white sugar
    1 tsp of vanilla sugar or vanilla extract
    4 tbsp of dark cocoa powder
    2 eggs
    1 1/2 dl / 2/3 cup of all purpose flour
    Breadcrumbs for coating the cake pan (flour or sugar work well too)
    + a springform pan
    Method:
    1. Preheat the oven to 200°C / 390 °F.
    2. Melt the butter in the microwave or in a pot on the stove.
    3. Use some of the melted butter to grease your springform pan. Then coat it with breadcrumbs.
    4. To the melted butter, add sugar, vanilla and cocoa powder. Mix with a whisk or spatula until combined.
    5. Add and mix in one egg at a time.
    6. Add in the flour and mix well.
    7. Pour the batter into your cake pan with the help of a spatula.
    8. Bake for around 20 minutes or until the middle of your cake jiggles just a little bit. The cake is supposed to be "muddy" inside.
    9. Smaskig fikastund! (Smaskig = yummy, Fikastund = coffee and treat time)
    I really hope you let me know if you tried it! I tried my best with translating from Swedish to English and from Metric to US units.

    This is a true story:
    A night at a prison in Sweden in 2006. It´s one of those prisons where the worst prisoners are held, like murderers. A guard forgot to lock some of the cells. What happened... was there a riot, did they try to break out, did they vandalize the place? They made their way to the kitchen, did they get knives, were somebody stabbed..?
    No, what they did was something they really longed for. Something that is dear to a lot of Swedes. Something that reminds us of home, family, friends, comfort, childhood...they baked a *kladdkaka* ! And made a fort out of pillows and watched a comedy movie.

    As a Swede who has made many a kladdkaka in my life, here's a pro tip: it only becomes more delicious the longer you keep it in the fridge. While you usually can't wait to have a bite right away (and by all means do), it'll taste even better after a day or two in the fridge and if you eat it while it's still cold. Putting it in the freezer for a few hours also does the trick if you need to eat it the same day.

    Here are some tips from Sweden about things to keep in mind to have it really taste like a kladdkaka
    1. More or less all recipes only use a dark Dutch process cacao powder (as that is the standard cacoa you find everywhere here. Hersheys seem to be the standard in the US, its not dutch processed and will yield a very differently tasting result)
    2. salted butter is the standard in Sweden , unless the recipe states otherwise.
    The salt helps bring out the chocolate flavour. It’s pretty common to sprinkle a little sea salt flakes on top right before it goes into the oven aswell.
    3. You have to use butter. Or a vegan alternative that sort of taste like butter.
    The butter, Dutch process cacao and slightly caramelised sugars combo of flavours are what make a kladdkaka have its kladdkaka chocolate flavour.
    4. It’s commonly served with soft peaked whipped cream. In Sweden whipped cream is more or less always served unsweetened.
    It sort of helps cut the sweetness.
    And if it’s not everyday fika but maybe a little special in some way, fresh raspberries also often accompanies the kladdkaka and whipped cream.
    Good luck!
    It’s really fast and simple. Often the first thing most Swedish kids learn to bake. As it’s very non intensive on the technique, it’s easy to get a super delicious result.
    Only real way to mess it up is to over-bake it and not have it be goey at all. (if you have instant-read themometer, the internal tempeture of kladdkaka should be around 78-82 celcius -around 173-180 f-. Significantly lower than most baked goods)

    Oooh! I discovered Kladdkaka a few years ago when using one of those "what can I make with these ingredients" recipe websites.
    The one's I've made I wouldn't really call.... cake? It's like a cake+brownie+lava. SUPER yummy!

      Its because we have different meaning of cake. Here in sweden kaka = cookie tårta = cake and kaka=kakor can be aswell be seen as a cake its just confusing.

      You should let kladdkakan stay in the fridge for at least 24 hours or so. I swear to God it's fucking epic then. It gets more solid yet still sticky as hell.
      We deerrfinitely do love fika here and if someone makes kladdkaka then hell yeah, you'll have company lol 😆

    I love kladdkaka! Especially a recipe on Arla’s website where you just mix all the ingredients in a pot on the stove first and then pour it into the cake pan and bake it in oven. The finished cake isn’t too overly sweet and heavy as some other recipes I’ve tried, but it gives a bit of a taffy like texture on parts of the cake and it’s wonderful with some vanilla ice cream. The recipe you use in the video looks similar to the one I’ve been using lately, though I only use regular cocoa powder in mine

    this looks amazing! some are squeamish about an oozy center like that so i usually cook and cool it a little longer. i pop it in the freezer after about 20 minutes out of the oven, then two hours later it’s quite the treat. i use 200g brown sugar, 160g butter, 30g canola for that gooey texture even when cold, 40g 100% dark chocolate chips and 40g dutch processed dark cocoa powder, 3 eggs and 40-50g flour, with just a teaspoon of vanilla extract and cook it at 350 for 30 minutes. the most yummiest cake

    One thing I particularly like, and it is quite traditional, is to butter the baking dish and then, instead of paper, dust the whole thing with breadcrumbs. It's a really common step in older Swedish recipes, and I like the texture it gives the bottom and edged of cakes.

    Most here in Sweden serve the cake with whipped cream. I personally never add sugar to the cream, so it balances the sweet cake. And most cakes here are usually made with the really dark cocoa powder. Love it!

      yeah I didn't even know there was more than 2 types of cocoa powder. And if I didn't watch people baking and look for recipies online I'd never know there was more than one, cause I've literally never seen anything but regular (aka dutch processed) cocoa powder in the stores here.

      Yeah I think that's because she got it from a UK newspaper which would have printed a slightly trendier version of the recipe. And black cocoa powder seems to be a new trend at the minute. I only had heard of it very recently but I've now seen a few recipes this year with it in. It certainly has an effect on the colour of the cake. Black cocoa is a US thing, found in Oreos. Its not as chocolatey as normal cocoa so I wouldn't bother with it except for the black colour.

      @@JB-xr9gl Right? Here (sweden) cocoa powder generally does not have much sugar added to it while the US ones have sugar and milk powder added to theirs (or so I thought). A bit closer to our Oboy.

    In Sweden we often eat kladdkaka with whipped cream or vanilla ice cream, and I like fresh berries with my kladdkaka.
    I usually have a pinch of salt in the batter to even up the sweetness.
    The amount of sugar or cacao powder it’s up to the baker and what that person likes.
    The longer the cake chills the firmer it will get.
    We usually make this kind of cake when people visits or for smaller parties, because it’s so easy to make.

    Kladdkaka 😁 so delicious. I usually eat it with vanilla ice cream and raspberries.
    I hope you'll try making the princess cake too. Swedish cakes are a bit different to American cakes, we use a lot of jam, custard and whipped cream between the thin layers of light and fluffy sponge cake. It can get a bit too sweet for me, so I usually substitute the raspberry jam for just mashed up raspberries.

    It looks a bit undercooked, a minute or two more in the oven and it would have been perfect.
    And yes, it works very well with ice cream or whipped cream and fresh strawberries. It can also be made with peanuts or other nuts in the batter. The one you made was more or less the original (minus the black cocoa powder), but there are tons of varieties.

      I do believe that black cocoa is closer to the cocoa we have in Sweden, I think their “regular” one is sweetened.

    As a Swede this cake is definitely something typical for the Swedish fika! Buuuuuut add a pinch of salt the next time (it’s included in most recipes for Kladdkaka and it brings out the chocolate taste even more) and also let it sit over night in the fridge. It makes it waaay better and let’s the cake settle a little bit. It will still be “muddy” but in a more soft way and not as gooey as it would be if you eat it directly. Also served with whipped heavy cream is you best option! Probably made this cake about a million times, so trust me 😌
    Thanks Emmy for making and trying out the cake! It’s really funny to see that this cake that’s so regularly included in our gatherings with family, birthday party’s or even served at every local café here has made it all a the way to your channel. That is a big honour!!!

    If you cook it all the way it is even better after it has sat for a day or two! It gets a wonderful chewy texture (at least it does the way my mom makes it) and it's great with coffee

      I feel that. I dont have Crohn's but im allergic to dairy, eggs, wheat, and other foods. My stomach would be a disaster area and I'd be a rash covered mess. Although the look of that cake almost makes me want to risk it.... Almost.

I had to research a lot about replacements for your conventional ingredients to recreate recipes and thankfully many are just as cheap if not cheaper 😄

    I make Kladdkaka all the time. It's a staple. I think I made my first Kladdkaka, on my own, when I was four. My mum helped with the oven. I eat it with whipped cream. Or use it as the bottom of my mousse cakes. A favourite amongst my friends and family is my quadruple chocolate mousse cake. Kladdkaka as the bottom, dark chocolat mousse, the nest layer is mars bars mousse and then white chocolate mousse on top. Very rich but very tasty :D

      The black cocoa is not really a part of kladdkaka, made many many kladdkakor and we use only regular cocoa powder. Also, use a larger pan and it will be thinner and chewy on the edge and softer in the middle (not runny).
      I never heard of black cocoa powder and I´m Swedish.

    Hi!!! Love your videos!! I actually work in my local Ikea restaurant and we serve it chilled. It’s is definitely amazing with ice cream. My kids actually use it very cold in our s’mores instead of a chocolate bar
