Cheap and easy eggplant recipe. Add some tomatoes & leek to eggplants and vegetable dinner is ready. This eggplant casserole is extremely easy to prepare and the result will amaze you! Cook with pleasure and your family will be happy!
📌Recipe and ingredients ( 8 servings):
2 small eggplants.
6 eggs.
1 bell pepper.
Olive oil.
1 leek.
2 tomatoes.
1/2 cup spinach.
3og (1oz) parsley.
3-4 garlic cloves.
125g (5 oz) cheddar cheese.
Salt and pepper.
1 tbsp flour.
