I suppose a regular automotive type DVOM Ohm setting is too high current for testing the watch coil. I see on that meter you are selecting the current for continuity testing.

Not really, the small swing of the needle is visible, but a digital meter won't really display it.

How did you determine how many seconds of pulse? (1 secs, 5 secs and 20 secs)
is determined from experience.
I think it is the design of the circuit, not your choice. Some watch hands only move every twenty seconds for example, but most are ine second.
The 5 sec and 20 sec pulses are seen in dress watches without a second hand. Some watches even have 60 sec between pulses.
