When my kids were little...trying to get fiber in their diet was a never ending battle. Sooooooo i would puree black beans up and put them in my homemade brownies. Unless I told you, you wouldn't know they were there. Kids and hubs loved them. The last several years I haven't done that as they have grown and moved out etc. A year or so ago they asked for my brownie recipe. I gave it to them minus the black beans. "This doesn't taste as good as they did when you made them when we were little." well.....this is why. No way you did that! Mom! Told them to try it. Crickets since and that is how they make their brownies now too. Lmaooo. I used to do all kinds of stuff like that and sneak things into their food that they otherwise wouldn't eat.
Definitely going to try this! I do my best to grow tomatillo's almost every year (not so easy in Northern Michigan) and can my own salsa verde - my guys love it! My sons favorite meal is carnitas, so this should go over well with him I think. I was taught that frying the chunks of meat help them stay 'whole' through the cooking process, but it doesn't look like that's an issue for you. By the way, I prefer a thicker sauce (and my family hates refried beans - the horror!) so I add some of my dehydrated, powdered refried beans in at the end, as a thickener. They love it, I just have to do it when they aren't around to see).
Instead of pouring the water in by itself, put it in the blender and get the rest of the salsa out and put that in the crock. Also add some hominy and you could have pozole verde😋😋
I’d love the recipe! I live in SW Idaho and we have a lot of Mexican culture here. We love Mexican food! I canned roasted salsa verde one year and my husband loved it, but it was a lot of work peeling the green chilies! I used the recipe from anoregoncottage. Thought you might be interested.

Yum! I love crockpot mexican recipes!! Did you ever make shredded beef or pork in your crockpot? I don't know if it was you guys or someone else I learned a trick from - cook meat in crockpot and when done you dump meat and juice in bowl of your stand mixer. Attach paddle to mixer, lower into bowl with hot meat and juice and turn on low. Let it go until your meat is shredded to the consistency that you prefer. So easy! A cheater green chili chicken is chicken breasts with a jar of chili verde poured over...cook until done and shred as mentioned above. Hugs and Happy New Year from So. California!

Do tomatillos taste very different to green tomatoes? I tried making a green tomato salsa verde and it smelled wonderful, but I didn't quite like the taste...too bitter or something. I'm guessing I just haven't accustomed my pallet to green tomatoes :)
They are very different. Green tomato is tart where tomatillos is sweet and has a slightly salty taste. Tomatillo are one thing I eat right out of the garden in summer since they are so delicious. The store ones aren’t as sweet and ripe but they are still good. I buy them and let them sit out on the counter to ripen a bit.
Do you have a recipe for some kind of pork chunks I think might have been cooked in Coke. Not sure what other ingredients might be used. We had it at a Mexican restaurant several years ago. It was so tender & on the sweet side, but still spicy. Would love to hear back. I really want to make it too.

I have no idea what the difference is between enchiladas and burritos. 😂 Also, the only tacos I know how to make are hard shell (think, what is it, old El Paso or something like that) which are my least favorite. Maybe a video idea…. a Mexican food education for us lesser educated on such things. Like me.
That’s a good idea!! Quick one for you. A burrito is really anything like rice, beans, meat rolled in a large flour tortilla. Enchiladas are corn tortillas that you fry a tiny bit and roll with cheese or maybe a little cheese and meat and place in a pan. Once you have a bunch in a pan you cover them with enchilada sauce which is usually red and is slightly spicy from chili powder.
