Hi Chef, what brand of basmati rice did you use when you were in USA ? I have tried quite a few brands, but either the grains aren't that long or there is no aroma. "Royal Basmati" is the best brand I have tried here.. it has a nice classic basmati aroma, but the grains aren't very long in comparison to what you seem to be getting... Thnx

Yellow chilli powder is the powder made of the seeds of a chilli pepper, if you dont have it collect the seeds and grind , u would have yellow chilli powder

In Lucknowi or Awadhi biriyani mint or coriander leaves are never used. It is used in Hyderabadi biriyani.

A1971ize true...they just take any ear catching fancy names for biryani..miles away from Lucknowi biryani.

Where might one find a clay pot such as the one you put the mutton in to once it was pre-cooked?
its hard to find such clay pots in your country (US I'm assuming)...but its not that important...you can always use a aluminum pot

how did you get or make brown onions?
Fry the onions in oil till brown color and rest them for some time. You can get brown onions.
you can fry the onions in oil and keep it aside to use later. Also you do get fried onions in grocery shop.
