Congratulations on the birth of your children!!! You are really making this way harder than it needs to be. Cover both sides of the foam core with the chop strand and roving as soon as you have it cut to size -- it will be way easier to apply on a flat surface instead of on a vertical surface. Then all you need to do is glue into place with thickened epoxy, and then tab to the hull with strips of fiberglass tape. You will make much better progress with this method as you can prepare many pieces all at one time on a flat surface -- you free time will obviously at a premium moving forward.
