Looks delicious. I’m finding it very difficult to prepare meals for myself….I will soon be 81 years old and lost my husband in April. I will have to try some of your dishes, because I need to eat as well as I can.
I am 65 and live alone. You deserve a good meal not just for the nutrition but also because a good meal is a blessing. Usually on a Sunday, I will cook 2 simple proteins. This could be 2 Cubed Steaks, and 4 Chicken Sausages. Then I cook a package of Rice from Dollar Tree 90 seconds in the microwave or I might cook a large Sweet Potato or make packagd Mashed Potatos. . And I cook 2-3 vegetables perhaps a can of Beets, a can of Corn, fresh Roasted Brussell Sprouts. Storing the veggies in a divided dish allows me access to all of them so I can easily pick and choose what I want for lunch or dinner then I choose from the rest of the carb and proteins that I already cooked. If I get tired of these ingredients I can put them together in a container for a future meal then freeze them. If I run out of say the beets, I can just use up what I have or augment with fruit or add fresh vegetables. This method makes " cooking" so easy for me as I just pop my plate in the microwave to reheat once I chose my ingredients. You have had a difficult loss so keeping healthy will be important but your grieving is also important. Prayers for you

@@jillgott6567 I do a lot of that too batch cooking, I rarely use my oven anymore but when I do I fill it up and freeze in single serving containers so I have choices for the month. Today for example I cooked 2 turkey burgers, that will be a dinner tonight and one for the deep freezer. Lunch today was Greek Yogurt with mixed berries ( I buy bulk bags of frozen berries from Sam's Club 3 pound bag for $7 something) and split it in to single serve containers. A quick easy lunch I drizzled honey over it. Snack today Apples spread with peanut butter. Anna In Ohio
On the Lo Mein you could have put it through a strainer and saved the broth to add to a vegetable soup later. And something it took my entire adult life to find out but you can easily make your own pancake syrup with brown sugar water and maple flavoring such a huge savings and no mystery ingredients. I wish I'd known that years ago I got the recipe out of a book called Make A Mix. Oh and the buttermilk powder? It makes awesome Ranch Dressing. Anna In Ohio
I made tuna salad today before I watched your video. I used a regular can of albacore tuna drained. 3 single size packets of mayo. Coarse grain Dijon mustard. Seeded zucchini, diced. Dash of onion powder and garlic powder. Mrs. DASH SALT-FREE seasoning. Dash of celery seeds and turmeric. Wrapped in a flour tortilla. It was delicious 😋 😂😂I made waffles for the freezer this morning too. Great minds 😊❤

I love Asian food, but the one thing I always have to stay away from is sesame; I am extremely allergic to anything sesame. I had to go into the ER several years ago after eating some sesame. Cool!! I've never heard about putting bread or bread crumbs in tuna salad 😮. I just recently found out about putting stuffing mix in meatloaf, it's really great!
Bread Crumb Tip: I take the heals of the loaf of bread put it in the toaster and toast sometimes it takes 2 X to get it toasted enough, allow it to cool, run it through the food processer and add Italian Seasoning or you could use any other seasoning and Boom you have your own bread crumbs to use for breading, surprisingly it last a really long time in the container it doesn't go moldy or anything. Well done! I too made tuna salad today for the next few days. I like to leave it in the fridge for a full 24 hours to get good and cold I was out of eggs so it's not going to be as good as usual, but you have to go with what ya got at the time and since grocery shop is a full week out I'm just going to go without the eggs. I'm doing Raman too this week have it in my emergency stockpile and right now with funds the way they are its an emergency! All the banana treats look so good I'm not eating any breads/cakes/etc anymore but they look yummy! Enjoy your meals : )
I’ve made tuna salad without eggs before as well. Sometimes you just have to make do. But I’m ok with that. I like that you are resourceful. Having a pantry is like money in the bank. Well done!

I’ve found powdered ranch generic dressing at an Amish grocery store. I think it will last a long time. You could add that buttermilk powder together and make your own ranch dressing !
I put quite a bit of chopped celery in my tuna salad to help stretch it plus I like the crunch. I am trying to lose weight so staying away from bread when I can.
If you have a toaster oven, it will save you a lot of money instead of turning on the whole oven. You can bake your bread and things for one in the toaster oven.
When I was a child, having tuna sandwiches was a luxury. There were 6 of us kids, so we didn’t have it often, but when we did, mom made them so good!

I don’t have a toaster oven. I have a very small kitchen and no room for one however I can see the advantages. My mom had one for years.
I think I would’ve divided the stock in half and froze part of it. It seems like a lot of beef stock.
I'd like you to come over to Hawaii and live on $20 a week. Lol. You'll starve.
I suspect going to Hawaii will not be in my future. We do the best we can where ever we are planted.
