    Known affectionately as our NOLA, our New Orleans-Style Iced Coffee is one of our most popular drinks-year-round-and has been ever since our founder James Freeman started making it to sell at farmers markets in the San Francisco Bay Area. Casting around for a worthy iced-latte alternative, he stumbled upon the New Orleans tradition of serving sweet, milky coffee cut with chicory.
    To make our NOLA at home, you start by brewing a cold brew base with assertive coffee flavor. When brewed with ground chicory, our New Orleans-Style Coffee is roasty, chocolaty, and holds its own when diluted with equal parts milk.
    For cafe-quality results, we recommend using the Toddy Cold Brew System, but you can also make a very good New Orleans-Style Iced Coffee with a large pot and fine-mesh sieve.
    Makes 8 servings
    WHAT YOU’LL NEED TO BREW
    Grinder
    340 g New Orleans-Style Whole-Bean Coffee
    28 g Ground Roasted Chicory
    2 quarts room-temperature water
    Toddy Cold Brew System
    WHAT YOU’LL NEED TO SERVE
    Tall glasses
    Ice
    Milk
    Simple syrup (see note) or other preferred sweetener
    STEP 1
    Grind the coffee on a coarse setting. The grounds should be the size of kosher salt, similar to the grind used for a French press.
    STEP 2
    Insert the stopper into the Toddy brewing container. Dampen the reusable felt filter and place at the bottom of the container. Place the Toddy paper filter bag inside the container and pour in the ground coffee, chicory, and water. Stir until the grounds are fully saturated. Twist the top of the bag until closed and let steep for 12 hours at room temperature. Remove the stopper so that the cold brew is strained into the glass pitcher. Discard the paper filter and coffee grounds. Serve at once, or cover and refrigerate for up to 1 week.
    TO SERVE
    Fill tall glass with ice. Pour in equal parts NOLA concentrate and milk or other dairy alternative. Sweeten to taste with simple syrup or other preferred sweetener, and enjoy!
    Notes: Instead of sweetening each NOLA to taste, you can sweeten the entire concentrate. In Step 3, after filtering it, adding ¼ cup simple syrup. To prepare the simple syrup: In a small pot, combine 3 tablespoons sugar with 3 tablespoons water and warm over low heat until dissolved. Note that while the unsweetened concentrate keeps for up to 1 week, sweetened concentrate should only be refrigerated for up to 2 days.

    1 Lbs course grounded coffee.
    + Chicory
    2 QT Water
    steep for 12 hours.
    using Toddy system suggested
    # making the Nola coffee
    In 12 Oz cup,
    Add. 4 Oz Ice
    4 Oz coffee
    4 Oz daily of your choice. The default is organic. Whole milk.
    Add simple syrup to taste.
    Nola concentrate ratio 1:4.
    4oz coffee : 16 oz water
    Drink ratio 1:1:1
    Ice, milk, coffee concentrate
    Coffee will stay fresh in refrigerator upto 7 days if you do not add simple syrup.

    I had this when I went to Santa Monica beach and it was sooo good! I went back later on the same day to buy another one but they closed early :( I added a bit more simple syrup because I like coffee a bit on the sweeter side, but I didn’t need much and it was delicious because I can taste the coffee flavor without it being bitter. It was the perfect amount of sweet and coffee flavor. Unfortunately I don’t live close to any Blue Bottles :( so I will try this recipe one day!

    Can you please make a decaf version please? Went to a cafe yesterday and ended up ordering a decaf latte instead which was still delicious but really wanted to try the Nola! ❤️

    So I just signed up for this kit last month and my first brew was really good.
    I'd like to point out a couple of issues. My first 24oz order (2 bags) only came with one 28 bag of chicory. I opted for one 12 oz bag for my next kit and it came with no chicory. Is this normal? Is the first one free and I have to buy chicory from somewhere else?

    The recipe card states 12oz coffee and 2 quarts of water.
    At two different points in the video, it’s stated this is a pound of coffee. Water required is 2 quarts.
    Should less water be used with 12 oz coffee? Are the new coffee beans super powered and still use same water amount?

      Craig, your keen eye has caught an error that shows Michael's age in glaring terms... You are correct, it should be 12 oz, our host mistakenly said a pound (because back in HIS day a full bag was typically a pound) when he should have said simply an entire bag (which is 12 oz) Sorry for the mistake!

    if we already use the paper filter bag, is the white spongy plug still required?

      The magic of brewing at home means few things are truly required as even when brewing goes wrong it is rarely harmful. The flat pad adds an extra layer of filtration that gives you a cleaner cup than with just the paper alone. I would suggest experimenting to see what you prefer. As a side note, Toddy suggests an alternate method that only uses the felt filter pad and not the paper.

    I did not get the recipe card with my kit...had to wing it. BB website does not allow reorder of chicory pkg.

    Can you share what brand you guys use for simple syrup?

      We make our own simple syrup Coco. We use a mixture that is 50% sugar and 50% hot water mixed together. We prefer a white granulated sugar.

      You can use Mason jar and cheese cloth.

      As long as you clean your brewing tools between each use, maintain your filters properly by rinsing and storing cool and use the product in a timely fashion it is very safe. This is essentially the same method we use in cafes around the world.

      Hey Sarah, you can definitely scale the recipe and just cut everything in half! We would suggest it still steep for the full time but aside from that just divide all ingredients by 2. Hope that helps!

      You certainly can, the kit just helps you make it easy and ensures you have the same ingredients as we use in our cafe. You can substitute for another coffee, darker roasts match the chicory best and then you can find the chicory itself at gourmet grocery stores. Then just follow the amounts we suggest!

    Uhhh.... Here's a twist. No we don't. Y'all went and made an iced coffee, named it after my home town, and did it in a way no one here would. We don't use chicory in iced coffee. The BREW METHOD is what makes that extra thick iced coffee, not added ingredients.
    You'd be surprised how rare chicory is in new Orleans. We mostly don't use it. Idk why you would. You're adding a cheap cut to your 14-25/12oz coffee. You're ruining it.
