    Does it have to be blanched?

      I've never tried it not blanched, I suppose you could. The blanching will help to tenderize the leaves as well as to keep the color and remove excess water.

    Oh, for shit's sake...use the guard on the mandoline! I am missing part of my finger because I didn't use the guard. Trust me.

    Too dark
