    For Thanksgiving 2022 I'll be making as a side instead of traditional green bean casserole, today I'm preparing the two parts ahead but keeping the topping & greens separated until when I bake them together on Thanksgiving Day.

    Excellent! I think you should save that water from wilting the greens in the Dutch oven. It is certainly loaded with nitrates that are essential for good vascular health! So save it, let it cool and flavor it with some fruit -- blend and you have a very healthy drink.

    For a vegan recipe I would use 1/2 cup vegan sour cream instead of the cream, more garlic, add favorite spices. For addition add organic great white northern beans drained and washed. Topping gluten free bread, vegan cheese like Daiya mozzarella shreds. To saute use homemade veggie broth.

    can i use tuscan kale instead (i don't like curly kale at all) or will it compact like when you used just chard?

    That's a nice variation. I'm vegan and I'd like to try substituting the cream with a mixture of blended cauliflower, potato starch, and coconut oil.

    Any suggestions for a substitute for the Parmesan? Need to be dairy free. I can use nut milk for the cream

      Nutritional yeast

      3/4 cup raw cashews
      3 Tbsp nutritional yeast
      3/4 tsp sea salt
      1/4 tsp garlic powder
      Add all ingredients to a food processor and mix/pulse until a fine meal is achieved. Store in the refrigerator to keep fresh. Lasts for several weeks.

    I am vegan so I could use vegan parmesan cheese and almond, or coconut milk instead of the heavy cream; I think it'll work great.

    Why not save the liquid from the greens and add to a soup, smoothie, something? There’s a lot of goodness in those liquids…

      The stems of the kale would be great for soup and stew, too. They are very soft and flavourful when cooked thoroughly!

    Looks like a great dish. This man is so methodical and exacting, that his butchery of the titular French word is baffling. Why not call the dish a "casserole"? There's no reason to be ashamed of the American term for this dish, is there?
