RECIPES IN THIS VIDEO
1. RICE PAPER ROLLS
Sliced fresh veg - cucumber, carrot, lettuce, etc
Fresh herbs - cilantro, mint, thai basil, etc
Seasoned tofu (or plain!)
Rice paper rolls
Dumpling sauce or peanut sauce for dipping

2. CHOPPED SALAD PITAS (here's what I used)
2-3 cups fresh lettuce
1/4 english cucumber
1/4 red onion
1 cup canned chickpeas, drained and rinsed
~1/4 cup fresh dill
2-3 springs fresh parsley
2-3 tsp red wine vinegar
2-3 tsp extra virgin olive oil
1-2 tsp whole grain mustard
Salt & pepper to taste
3. CAESAR-ISH SALAD
For the Dressing: *makes extra
1/4 cup cashews
1/2 tablespoon capers
1 teaspoon dijon mustard
1 teaspoon nutritional yeast
1 clove garlic
Juice of 1 lemon
1/4 cup water
1/4 cup neutral oil
pinch of kosher salt, plus more to taste
For the Salad:
1 can chickpeas, rinsed drained and patted try
1/2 tsp garlic powder
1 piece cornbread, cubed (optional)
Avocado oil spray
2-3 cups fresh lettuce
6 ounces cherry tomatoes, cut in half
Vegan parmesan, for topping

Yum! I love summer rolls with peanut dipping sauce. Make them a lot in summer as well as sesame soba noodles served chilled with a soy sauce, sesame oil, red pepper flake dipping sauce.

I used to like to make falafel waffles, in a waffle maker and fill the fawaffles with spinach and hummus and red onion and , you know... what ever you want. I found that adding a little extra oil to the falafel mix helped with the waffle maker cooking prosses.
Try overlapping two rice paper wraps and use two. Allows for it to be fully wrapped.

Caitlin, can you do a video on sabotaging? I am brand new to WFPB way of eating and struggling a bit. I do well with breakfast and lunch, but then dinner comes and I think I freeze - in a rush, not knowing what to make (on top of I am the only one in the family eating this way) and I just end up giving in and having a SAD type meal instead of Whole foods. I really want to be PB, just struggling with the willpower aspect. Any tips for beginners?

I love summer rolls but when I make them I feel like they take a lot of prep time and even assembly so I like to prep everything ahead of time and I often just make a salad instead of assembling the rolls.
