No wild salmon sold in stores has swum even a tiny bit in its freshwater spawning river destination. It is all caught in the ocean. Wild salmon can be caught in rivers, but that would be by regular fishermen or native Americans.

Where do you test the temp though? Which part of the fillet? Because if I wait for the thickest part to reach 120 degrees F, the thinner part will be super overcooked.

Avoid farmed fish. Because of what they are fed you do not get the health benefits of wild fish. You might as well be eating a steak. and speaking of steak, if you want to have some of that be sure that it isn't feed lot raised. Pay a little bit more for your food and get food that is better for you.
Look up food safety times. Not everything including chicken!! Has to be a 165f. It can be safe if held at a lower temp for an extended period of time. :)

This ignores the fact that wild salmon is virtually extinct. Modern stocks were bred in captivity and released into rivers as hatchlings. Once mature they interbreed with escaped farmed salmon. There is no true wild salmon any more.
About 4 or 5 years ago I started grilling salmon from Sam's club and Costco, and yes it was farm raised. Then I noticed some wild caught sockeye salmon at one of the big box clubs, and bought it to try. It was awful in terms of flavor. Maybe it was a bad fish but now I stick with the farm raised fish.
What this really pro as is you are totally ignorant of wild Salmon life cycle. Also Alantic and Pacafic salmon are totally different species. Like comparing chicken and duck. Salmon that swim up stream are at the end of their life cycle and spawned salmon are never fished and sold.

Can someone mention how much is 125 degrees. I was told to bake fish at 450 degrees per inch of thickness. Is 125 celsius or Farenheit
125 is Fahrenheit and he is talking about the temperature of the thickest part of the fish not the oven temp. Hope this helps.
