INGREDIENTS:
To fry boiled eggs:
Boiled eggs - 5
Butter - ½ tsp
Oil - 2 tbsp
Salt - ¼ tsp
Turmeric powder - ¼ tsp
Kashmiri chilli powder - ¼ tsp
For gravy
Oil - 2 to 3 tbsp
Butter - 1 tbsp
Whole Masala Spices
Bay leaves - 1
Cloves - 4
Black cardamom - 1
Green cardamom - 4
Crushed ginger garlic - 2 tbsp
Finely chopped green chillies - 2 (less spicy)
Finely chopped onion - 2 big sizes
Finely chopped tomatoes - 2 big sizes
Finely chopped fresh coriander leaves
Hot water as per requirement
Salt as per taste
Kasuri methi - 1 tbsp
Dry Masala powder
Turmeric powder - ¼ tsp
Red chilli powder - ½ tsp
Dry coriander powder - 1 tsp
Cumin powder - ½ tsp
Kashmiri chilli powder - ½ tsp
Kitchen king masala - 1 tsp
Goan garam masala - ½ tsp
METHOD/PREPARATION
Step 1:
Boil eggs, peel outer cover and with the help of knife put little cuts on each egg. Keep it aside. In a pan add oil and butter. Let butter melts. Add eggs and fry till light golden in colour on low flame. once colour started changing. Add salt, turmeric and red chilli powder mix it well on low flame. don’t burn masala. Once all masala powder properly coats with eggs. Switch off the gas and keep it aside.
Step 2:
In a kadai, add oil and butter and let butter melts. Add all dry whole spices (mentioned above) fry till aroma realise. Don’t burn it. add crushed ginger garlic and chopped green chillies and saute till raw smell of ginger and garlic goes away. Add finely chopped onion and saute till its turn into light golden in colour. now add all masala powder except garam masala (mentioned above) mix well on low flame. once properly fry add 1 cup of hot water. cover and cook on low flame till dry masala cooks properly and water dries away. Once water dries open the lid and add chopped tomatoes, add little salt just to soft the tomatoes fast. Saute till tomato become soft. add hot water to adjust consistency of gravy (I used 1 ½ cups of hot water) mix well. cover and cook for 10 minutes. after 10 minutes open the lid and add Kasuri methi, Goan garam masala and salt as per taste. Mix well. add shallow fried eggs (also add butter, oil and masala too) in gravy. Add finely chopped fresh coriander leaves. Mix and cover and cook for 2 minutes on low heat. After 2 minutes open the lid and switch off the gas.
Serve and enjoy delicious egg masala curry with steamed rice or chapati.
