Did You Plant Garlic? You Need to Cut Off the Scapes!

  • Did you grow garlic this year?! Garlic is my favorite thing to plant and I love to grow hard-neck garlic. It does well in colder climates since it is winter hardy. Starting in September, I plant the cloves. They grow throughout the fall and then are dormant all winter. In the spring, they already have a headstart and grow fast and large!

Depending on your growing zone, the timing can be different, but right now is the time I cut off all of the garlic scapes. If you aren’t familiar, hard-neck garlic produces scapes which are simply flowers that want to bloom. If you let them bloom, they take all the energy away from the head of garlic. Not good! Instead, cut them off when they want to curl. The head of garlic will finish growing and put on additional size.
Bonus: you get to cook with garlic scapes! They're such a treat to use in pesto, or you can roast or sauté them.
In a couple of weeks, I’ll show you my garlic harvest too!

Kaleb, last year for the first time, I chopped up the garlic scapes, sauteed them, along with some diced jalapeno (both red and green -for color) and onion, in butter, then I added in eggs and scrambled all together. YUM, that made the best-ever scrambled eggs!

Garlic scape pesto pasta salad tonight! I planted 10 different varieties of garlic in containers. The scapes came up in two waves. One looked really dead so I figured I would dig it up today. They were small but usable with a decent skin. I don't know anything about growing garlic, just experimenting.

Thank you!! This was very timely for me as I planted hard neck garlic for the first time last year and now there are scapes coming out of all of them. Could you show your pesto making using these scapes? I also thought it was interesting that the tips of your garlic plant leaves were a bit yellow because mine started doing this, too. Is this normal right about now in the growing season? I couldn’t figure out if they were over watered or too dry. We’re experiencing a bit of a drought right now, so being too dry is certainly possible. Thanks again for sharing 🙏 very helpful ❣️

Any tips to encourage the scapes? Do you add compost in the winter and early spring? I'm in zone 6b and I have them growing in containers and they get afternoon sun. much thanks!!

Garlic scapes will grow in May of the following year. Garlic can be dug out of the soil and harvested in June or July.

I know hardneck doesn't last as long, but it doesn't ever go bad does it? As in, it won't hurt you to eat right? Just the flavor not as good?
