One way to fix it is to "mature" them. This means fill them with your chosen filling and refrigerate them for 24 hours covered. They shells will swell slightly and fill out.

Hello lovely I had a go at your macarons they came out great with no resting I was surprised 👌the feet are not that big ? And I did two different batches on different trays the thinner tray they stuck I’m going to go buy new trays these are kind of old 😬🤔

Unfortunately I don't think so. Macarons are meringue and almond flour (ground almonds into a fine powder). You could just make Meringue cookies if allergic to almonds like I am.

Ive tried this technique twice and both times my shells come out hollow looking like volcanoes 😅😩. But i love your resting technique, the shells come beautiful all the time 💙
You undermixed or overmixed I think, I used to have those too and there is either too much air inside or too liquidy maybe just try again and try to get a different texture

Hello! I recently came across your channel and I love your recipes! I was hoping you could give me some advice regarding making chocolate macaron shells... I had tried 2 other recipes before I found yours, and they both failed miserably! The tops came out completely wrinkly and shriveled, almost like the top of a brownie. Then I used your recipe (the one with the chocolate monogram) and they are by far the best batch yet! Although about half of them still puffed in the oven and then came out wrinkly on top. Not sure what it is about chocolate, I can practically make plain vanilla ones in my sleep and they are always perfect 😖 dunno what I'm doing wrong, would really appreciate your help!!

It's just tricky because we have an electric oven and it's incredibly hot, so I'm always afraid of burning them. Plus a few started to puff and wrinkle within minutes of being in the oven... So frustrating! 😕 But I will def let them go a few minutes longer next time. Oh and btw I love your technique of putting all of the meringue into the dry and mixing it that way. We'd always done it the other way around and added the dry in thirds, your method works so much better! Thank u again!!! ☺
I had this happen too, it actually has to happen with the meringue or mixing step! My issue was over mixing my meringue plus adding a bit too much liquid. I hope you make some great ones soon, I found it useful to look up macaron mistakes on here or just google

Can you please show how your oven racks are setup when baking 2 trays at once? When i do this, one tray always brown more than the other. If you bake one tray at a time, do you decrease the temperature of the oven after the first to prevent browning or toasting?

My question, most of the recipes has to dry the shell first, otherwise it will break. Mine too. Now your recipe and techniques are are still the same, but why your shell does not break without drying?

If testing works better for you stick to that! I still rest sometimes.

It's just amazing how you could make that work! Does your icing sugar contains cornstarch, or was it just finely milled sugar?

They are not fully cooked. Reduce the temperature slightly and cook for a few minutes longer.

You may need to bake for a couple of minutes more. It sounds like they were under-baked.

Thank you! Yes I use fan forced. My fan is at the back of the oven. I set my dial to 130C which gives a final temp of 150C because of the fan.

Hello! Would you recommend using your silky smooth buttercream for filling macarons over your condensed milk buttercream?
Either works well. They are very firm when refrigerated and soften when sitting out of the fridge like regular buttercream.

Tania Dissanayake it’s optional. You can replace with the same amount of lemon juice or just leave it out all together.

The batter may be under-mixed so there is too much air in it and/or the oven temperature may be too high.

Even i dry it over 1 oder 2 hours my shell breaks brcause it was not dried enough
