Today I show you my take on the 1980's surf n turf I have made sous vide. It's also called steak Oscar which has the combination of Filet Mignon, fish and shrimp. This was an awesome cook and I hope you enjoy it.

1 tbsp of minced shallots
1 tbsp parsley, cilantro, chives,
1/3 cup mayo
2 tbsp sour cream

For the fish cakes: Why not mix all the non-fish ingredients in a separate bowl, then fold in the chunks of fish to minimize the chance of you breaking up the chunks of fish?

As a Swede I salute you. The origin of Steak Oscar (Filét Oscar) is a tribute dish to the Swedish King Oscar II, first created in 1897. The original dish consisted of Filét Mignon from Veal, Lobster and asparagus, on a mirror of sauce choron that fomed an "O", topped with two asparagi that formed the roman numerical "II".

Made this to tonight. Guests said it was the best meal they ever had. Took about 2.5 hrs to make and cook. Used a huge propane weed torch from harbor freight to sear. The fish cakes were a little loose but the freeze trick is spot on. Figured out to use just a little oil and get the cast iron pan to about 400F before placing the cakes. This made a crust that held it together. The aroma while I cooked this was amazing. I used a hot plate and cooked outside with my guests. Great nite. Thanks for the roadmap.

This is a cool recipe, but the thumbnail bothered me a little. The 3 Michelin stars image is misleading unless this recipe is from a restaurant that serves this that has earned those stars. A lot of these restaurants are struggling and even the top end restaurants near me and are trying to collect donations just so they can keep employees, so they don't have to fire them/close down. I appreciate your videos.
