It's not true that there are only two train companies in Italy. This is valid for long journeys, but there are also regional/local trains. For example, in north Italy there is "Trenord", which covers basically 3 or 4 northern regions only. You don't need to buy ticket in andvance for that, and for short travels the ticket price is not more than what you pay for a bus ride. Some lines also go undergroud and cross the subways in metrolpolitan cities like Milan.
For high speed tickets you could buy them not before six months online (if I remember correctly). The deal is that, until 1/2 months before you could find tickets at half the price (and sometimes even less). For regional tickets, price is fixed.
