    In this recipe Clara uses 5 lbs of flour to 2 oz. of yeast. Add room temperature water throughout process until the mixture feels like proper dough. Add touch of salt and sugar to taste.

    Its 3am and I'm up making bread :) I'm a 49 yr old man and my adult children are slowly coming home. I have no idea how long this pandemic will last or if another depression is near . Times change and we push on . I'm grateful for her videos and the knowledge she has given . When I was a small boy I use to help my grandmother make so many things and my grandfather taught me to hunt and fish . They had a big garden :) Over the last few months I've stocked this house with 6 months of supply's and in the last few days my wife and I planted vegetables where the flowers use to grow . I really enjoy all of this and I'm greatful for each day . The neighbors have a farm and they trade eggs for my hot loafs of bread. The barter system has already started . I wish everyone the best .

      @Becca Wilson It turned out OK 👍 Still prepping and I ended up getting my own chickens so I always have eggs . We canned alot of things and planning on more this year .

      ​ Did you plant a garden this year? We have the biggest garden we've planted so far with another small one closer to the house. We have chickens and quails with more chicks arriving this June. I bought an incubator so we won't have to order anymore unless we want a different breed. I added trellises this year so we're adding a bunch of different gourds, grapes, bitter melons and other vining plants. After the high heat last summer I wanted to add things that love heat. Things are looking crazy out there. I wish you the best my friend. More gardening and more prayers. 🙏

      My grandmother always used to say that too. She was the daughter of immigrants and grew up during The Depression too. She was a great cook too like Clara. May they both rest in peace.

      I am child 8 of 8, raised by a single mother, we were poor to say the least, but it's amazing to see hear the similarities, my mom's parent's were both from Italy, I can make a meal out of anything, grow a garden, and repair clothes over and over, it's kinda funny when I see my friends struggling who make the same money as me, well, I but generic, I shop of clearance racks, I repair things before I throw them away, and I generally only buy what I need, when I do splurge I make it count

      Funny but I'm here in 2023.. and I still miss Mrs Clara vidos from 7 years ago. It's nice to revisit these videos and forget the nonsense going on now.
      Nothing left from hollywood is worth watching so I'm all Retro viewing movies and faith based things. Mrs. Clara gives me hope for the future.. I prayer her family is keeping her posterity alive for many decades.

    When I heard the crusty bread being cut, I was a six-year-old in my Grandma’s tiny kitchen again. Sitting on my knees in the chair at the table, I watched as she did exactly what Clara does. Except, when Grandma goes to the sink for more water, I pinch off a little dough and hurriedly pop it in my mouth. She knows it. Grandmas know everything. Rest In Peace, Georgie Girl.

      with italians if you had a full fridge - you were rich. My mother had tons of jewelry and fancy china and crystalware - when we came back from vacation she forgot that she had emptied the fridge out before we left for a week. When she opened it up she said - no matter how much jewelry you have or how big your house is, It makes me depressed to see an empty fridge.

      Did you ever watch Peter? Geriatric1927? He passed away last March, but he was a beautiful soul and he spent many of his last years sharing his life and wisdom here on TH-cam and for a time, he was, I believe the #1 most subscribed youtuber which is awesome.

    She is like the Bob Ross version of cooking. She could read me the telephone book and I would still be interested, what a soothing voice. She is funny and I love her stories in between her cooking. RIP grandma!

    Sad thing is back then, the poor all made home-made and relatively healthy food (If ingredients weren't tampered with) so things could be enjoyable and the food can act as an upliftment from a dark time, but the poor today only have access to processed/ nutritionally low and empty calorie foods in what can be described as a 'food desert' and relegated to future health problems. While those who can afford it spend top dollar for artisanal foods which are made from simple ingredients and funnily enough the food of the poor in the past. Very weird how time has some sick humor. We can learn so much from Clara now and always, her wit and wisdom will always be with us now, and I am forever thankful.

    GOD I love old people! They make my heart feel good. I could almost smell that bread- and I just remembered she'd made peppers and eggs before that. That house musta smelt like Heaven. Thank you for sharing Clara with us... I agree with all the other Clara lovers.

    Oh your nonna was a darling. I have fallen in love with her. You were all so lucky to have her in your lives. I love her kitchen: her cupboards, the stove, her enamel mixing pan, everything in that kitchen harkens a bygone era.-discovering Clara and these videos has been like stepping back in time and visiting my childhood .     After seeing a few of the videos and finding out that she passed away, It was like family...I cried...some of her recipes were like my grandmother's but my grandmother did not have her lovely disposition. she lived my grand grandmother to 94..she was not that pleasant..but her stories were good ..and I have her recipes...

      Clara was a lot like my grandmothers, thank goodness...she always made me feel so Blessed and happy. I learned things about the Great Depression I never knew about too...I so wish all of us could have had or do have now a Mom or Grandmother like Clara...and yes, I cried too, when her family put the video on about her passing away...she was family...😊🙏💖

    Just found Clara - didn't know that she had passed - What a fantastic example of a great human being - wouldn't the world be a far better place if everyone were as kind, co-operative, considerate and loving as her? -I'd rather listen to this wise lady all night than waste my time on any stupid reality TV show

    I remember asking my grandmother to tell me about the great depression, since she lived through it, but she simply refused to talk about it.
    It was really frustrating because I merely wanted to learn from her life experience, instead of only learning about it through our school books, but I guess it was so traumatic that she didn’t want to even recount it. I am grateful for these videos.

      Horrible things happened. People lost their homes, jobs and savings. Clara's stories are more about how her family got through; gardening, canning, home cooking, squeeze every penny until it gave birth to a quarter. My parents grew up in the depression but my father's family lived on a farm so at least they ate. My mother's brother could remember until he died what it felt like to go to bed hungry. They were town folk. I just love Clara; she like 'yeah, that happened.' Her family survived.

    Can learn so much about life from the way our grandparents lived. My grandma used to mix all her baking in a giant bowl of flour. Every ingredient went just in the middle of the bowl. It never stopped that bowl. Pie crust, bread whole nine yards. The best biscuits and baked goods came from the same bowl. She was amazing.

      Zenyrokx You generally let bread rise until it doubles in size. It can take an hour or two depending on ambient temperature, how much yeast you used, etc. The first rise. After you put it in a pan, the second rise usually is a bit faster. Bread is a great thing to make, but it's also one of those things where you have to be patient and give it time.

    What a lovely woman. So sad that I just found her videos. I watched about 9 videos and then saw the one where she had passed and I was so invested in her that I shed a tear or two...strange to feel like that, but she was amazing without having any sense of how amazing she was.

      I cried when I found out. She was like a perfect mix of my great grandma and my great aunt and I found her about a year after they both passed away. (They passed away within 2 weeks of each other). I was so sad and definitely cried. I cried when watching her videos just thinking of them and then cried because I missed her even though I’d never met her. Thanks you for sharing her.

    I’m 33 years old born in 1990, I enjoy to cook in the kitchen for me and my son , I can tell you I have used some of her recipes! Also just now I learned how to bake bread!!! and spent hours watching her on you tube late at night after I put my son to bed.     Oh what a dear woman. She reminds me of my Gramma who raised me, who had also lived during the Great Depression. Long ago Gram taught me how to use whatever ingredients were around the kitchen to make a feast, and she often recounted stories like Clara told about how to have a positive attitude and survive hardship. Those who lived thru such times learned the hard way to appreciate the blessings we all too often take for granted today.
    The older generation has always been the repository of much wisdom but our nation has come to the place where seniors are no longer respected or cherished like they used to be. So many young people will never know the blessing of sitting at the feet of such wise and practical survivors.
    To whomever posted these videos: Thank you so much. They've brought back such wonderful memories of my beloved Gramma, and hopefully will be watched and appreciated by a new generation.

      +Quinn Burpino Thank you for reminding me of the same. I grew up when there was a dignity about one's comportment, a reverence for God, a pride in America, a respect for others, an appreciation for everything, and a courtesy extended that is often missing today.
      Unfortunately, many things are plastic today....including people. So I'm grateful to Clara's grandson for chronicling her recollections of a different....and better.....time in America. Maybe a new generation will watch these and try her tasty survival recipes, but adopt her positive 'survival' attitude & response to life's challenges.

    sugar and butter were very rare and expensive commodities back in the Great Depression. When I use to work in the nursing home industry, I noticed that many of the residents liked their coffee a tea plain black, nothing in them. I asked a few of them why and they said they did without sugar and cream when they were younger and they never felt the need to add it. Sad to think how spoiled many of us are (esp. my 30 something generation).

    I started watching Clara a few years ago and I was HOOKED. I think I binge-watched every single one, and went back for more afterwards!
    I just ran into them again and found my several favorites (peppers and eggs, bread, dandelions) and I'm posting a. few on my social media sites.
    Clara was and is a national treasure.

      +Kara Amundson Why is it that when most people see someone like Clara, they are so touched by them and they are drawn to them and call them wise, which they were and it all went into growing the character depth that they have? Today, when people try to tell younger people about character, they don't want to hear about it because it will spoil their fun and their love for acting badly. And people wonder what happened to make things like they are today. Try to tell them and they deny that's what's wrong.I was born to older parents born in the beginning of the 1900s--1901 and 1903. They shared that wisdom with me and I ate it up. I'm so glad they were my parents.

    I love Clara. These videos are ao calming, valuable and timeless. They make me feel like I'm a kid again and I fell asleep on the living room couch while watching a Celtic Woman special on PBS with my mom, then woke up at 2 A.M. to find Clara cooking, and I stay up to keep watching. Feeling cozy and safe, I snuggle up to my mom, and all that matters in that moment are Clara's peppers and eggs.

    I need to have patience to bake bread, I get so frustrated cause it is a long process and I sat here and watched her (precious ) take her time and relax and I felt bad that I can not do it but she did.. I am learning so much

      lydia green don't feel bad. Its best to make it when you're not hungry so when it's finished you're ready to eat. I'm also in a hurry when I cook because I always cook when i'm hungry

      Honestly, I'm much happier to just pay for fresh baked bread sticks my local grocery stores baked section. It's much easier to just wake up early and get it out the oven than to do this whole process.

    I just LOVE these videos of hers! My grandmother was frugal and home cooked EVERYTHING. I miss her so much. I do a lot of home cooking myself. I really enjoy making yummy things and watching my family enjoy them. I miss this generation..

    This bread is AMAZING. And I store it in some jumbo christmas cookie tins and it stays fresh.Tastes just like the stores Italian bread they bake fresh and charge $2 a loaf for but this made 3 big loafs and a pizza TY. RIP

    You know it wasn't all about what she was cooking, but how she cooked it...it gave us all an insight into a time not many can remember today. It was about how harsh some of their foods, available to them, were and the harshness of their life then. Her Mom fixed it so her children and family would think it was a treat almost...when you have those talents, like Clara, you can feed a family for next to nothing and still make it taste really good. People today, think if a meal doesn't have meat with it, that something is wrong...we oftentimes lose our imagination when it comes to preparing food for ourselves or our families...Clara taught all her watchers that there is a lot more things you can cook, that are far less expensive and taste even better, when prepared the right way. When Christopher first approached his grandmother, Clara about filming her...she said no one would want to watch some old woman cooking...it wasn't long before she realized that there were a lot more of us out here than she ever thought possible, that dearly loved watching her cook and telling her stories about the Depression...when he told her, she was surprised, he said...but, it made her really happy too.🙏💖

    I’ve been watching these videos for several years.. Clara reminds me of my own grandmother. She also grew up during the depression, did her own canning, and was always baking and cooking in the kitchen.

      TheCRAZYCAT68 I don't know if you're a spinach or tomato fan, but my husband loves it with spinach and tomatoes, along with peppers. I have my own technique with making the bread. I make french bread when I make this. It's really tasty!

    My own maternal grandmother was around 96 when this was filmed and she also told me many stories about the Depression. She immigrated to San Jose, CA in the 1920's from New Zealand when she was a little girl and her family ended up moving into a largely Italian immigrant neighborhood.

    Love Clara's videos, not only for her beautiful and relaxing self but for recipes that are true home cooking. Who knew bread was so simple? TH-camrs be telling you to use this random type of flour and kneed your bread for about 10 hours and add in 1000 extra ingredients. This bread is simple and perfect

      greatedcorn I think she used two yeast cakes for a 5 pounds of flour which converts to 6+3/4 teaspoons. It raised a lot so make sure you have a big bowl handy.

    She reminds me of my gread grandma. She used to bake every saturday and I helped her. I learned so much about work from her. The love for food and eyeballing everything... she was like magic. I miss her so much.

      I don't know if I can get away with that.
      I got the basic ingredients down. Flour, water, salt. Sometimes I use active dry yeast. Sometimes I use a sourdough starter. Really, that's all bread is. But the no measuring part? No thanks. I need my scale. I get my ingredients down to the gram.
