A Crash Course on Rabbit and Polenta with Elena Faita

  • In this episode of Giardinos, Le Bremner chef Danny Smiles gives props to Elena Faita, the godmother of Italian cooking in Montreal. At her Mezza Luna cooking school, Danny gets a crash course on a hearty northern Italian rabbit and polenta dish-perfect for Montreal’s brutal winters. He also learns the dangers of cooking with pepper and the not-so-delicate art of butchering a rabbit.
    But right before his one-on-one cooking lesson, Danny walks us through Montreal’s Little Italy to pick up supplies and pastries for Elena, whose nearby Quincaillerie Dante hardware store is an institution and one of the last old-school remnants of a rapidly evolving neighbourhood.

    people like elena reinforce why i love cooking. Its, for me at least, more about the history or the story of the food and the socialising that comes from it. Food is what connect us to previous memories and generations and it brings us together. Obviously we should always push the boundaries of what food can do and constantly reimagine it, but we can never forget why food is so important to us

    Loved her! I would only hope someone would actually get your recipes into a book. Could be so much more than a cook book, but a book that happens to have recipes sharing her personal story and that of her community. Awesome episode.     I had a friend that has family that was full Italian and he had a grandma just like this. loud and everything and I loved her to death.She cooked for the Fourth of July and it was the best food ever...and there was no "meals" we just ate different foods all day long. I know no one cares but man this video brought back memories to her

    You also have garlic in some tomatoe sauce to substitute the heat from black pepper but I completely disagree with the black pepper the lady was saying it should be at minimum a pinch just to balance the natural sweetness of the tomatoes as well to give you the after kick of a lil heat after you feel the sweetness of the tomatoe sauce when it first touches your palate but I do agree not everything needs too much black pepper

    here in piemonte(italy) polenta is cooked in a giant copper pan and stirred with a wooden spoon. grandmas wouldn't sleep at night if they made it elseway :)

    does the rabbit have to be a certain way? we have meat rabbits they are lean less fat taste good though because we give em mostly pasture. is this rabbit for like FEED raised rabbits with a bit more fat?

      +MsTokies Elana removed some of the fat from the rabbit and added butter and panchetta, both for fat. it might be a matter of adding more butter but 100g isn't a lot for a whole rabbit. while it roasts you might be able to visually determine if more fat is required. if you look at 11:30 it looks as though there isn't much fat in the pan other than the butter and panchetta.

    at 7:05 , into the oven for hour to hour and a half at 275 F, uncovered . OK then, nice low temperature. Then... the cooked rabbit transferred to a clean pan and covered with aluminum "paper" and back into the oven at 200 F . Just to keep warm ? While you deglaze the first roasting pan.

      what I do suggest is after 1 hour, check the meat with a thermometer , when it's 150- 160 inside , pull it . just like chicken it will dry out fast , BUT unlike chicken it's a cleaner animal and salmonella is not an issue .

      Northern Italian food has cream. The more south you go they don't. Just like thin pizza crust in the north then the crusts get thicker the more south you go. Every country has variances in their recipes depending on regions.

      it doesn't belong in traditional Italian tomato sauces. given that the sauce in cacio e pepe is a cream sauce, it's a different case entirely.

      this is interesting! in Piedmont, northwest italy, corn is called "meliga" ("melia" in piedmontese language) while in italian is called "mais" or "granturco".
      It seems that "mamaliga" has the same origin

    Not sure what shocks me more.. no pepper, or not even roasting for sauce, but tearing out and discarding fat.. from one of the leanest proteins known.. What Italian throws away flavor potential like that away!? Pancetta and butter went in, so it's not like it's weight watching either..
