I've seen a few videos where they say that the people who follow the Maturidi and Ash'ari in creed spread 'bid'ah' and how they 'don't follow the Aqeedah of Ahle sunnah wal Jammat'.

No, but guess what - the Islamic sciences developed over time i.e. fiqhi madhabs, schools of tasawwuf, hadith sciences, etc. The salaf didn't need such developed sciences as they either had direct contact with the Prophet ﷺ or the first three generations.
