Thank you for the video! Can you tell me, is that an 8 inch cake pan? My wonderful neighbors used to make homemade ice cream cakes for their kids' birthdays. They were always struggling for money, and found the best ways to save. The kids were in charge of making their own cakes and added all kinds of roughly chopped candy bars in the center and on the sides. Their cakes were insane and delicious. We've since moved away and were missing these cakes and wanted to make our own. I don't have a stand mixer and I learned how to make whipped cream in my Vitamix. It takes no more than 30 seconds. It's probably more of a hassle to scrape out the Vitamix container than the mixing bowl, but other than that, it might actually be a better method. I don't know if the whipped cream starts to break down if you go too far, but I've only found that if I over mix it, it becomes TOO STIFF, so I think it's possible that you actually didn't whip the cream ENOUGH in the video? For the Vitamix whipped cream, you can use pure sugar or confectioner's sugar. I wonder if using confectioner's sugar might make the whipped cream more stable for a longer time, but I've kept my whipped cream with plain sugar in the fridge for days with no ill effect.
For a first time this is amazing you should totally continue doing this yes your right trial and error but I saw the effort you put in and the love you put into it, way to go, you should be proud of yourself

Breyers is not the best ice cream. do a youtube research on it. most of them don't even melt. Not sure what is in it to cause that but i was shocked to see your chocolate melt so much! For breyers that is unusual. You can leave it out for DAYS and it usually doesn't melt. no kidding. Anyway, great job on the cake! Ill have to try this as my family loves ice cream cakes for birthdays etc. but they cost so much! Great idea!!
