Aloha Howzit, i have a question about making this dish, so with the taro leaves whats your take on making sure they are cleaned and fully cooked. I dont want any of the greens to be raw as i read its dangerous and very harmful. And would you prefer the squid or the octopus for this dish? Im trying to surprise my wife on me making this hehe
Lu'au leaves have calcium oxalate, so if eaten uncooked will cause an itch in the throat. Leaves definitely need to cleaned and cooked prior to eating. Although this is called squid lu'au, it uses octopus. You can totally use whatever protein you want here. Super easy. Just follow the directions and you'll be all set. Enjoy!
Great question. Baking soda is used to keep the lū’au leaves green. It makes the water alkaline and helps keep chlorophyll in, which gives leaves it’s green color. It softens the leaves and breaks down the calcium oxalate quicker.
