Used to go to our little corner grocery in the mid 70's and they had the big jar of pickled bologna ring at the meat counter...I could get a big chunk, crackers and a 16 oz soft drink..."In a glass bottle"...for .25 cents! Those were the Days!
Every time I eat one it takes me back growing up and stopping at my cousin's country store and getting one and crackers and a Dr.Pepper. Great memories for sure. Thanks for going down memory lane with me.
My G.F. is from Michigan and constantly talked about the pickled bologna that she used to get in the small stores there. Here in the deep south, the only equivalent there is is pickled southern sausage. I made some pickled bologna for her using Andy's hot dogs. She ate the entire jar in just a few days!
I'm from Michigan, and when I was a kid, working with my Dad in his excavating business, one of our favorite lunches was getting a ring of Farmer Peet's pickled bologna, a loaf of Sunmaid Raisin Bread, and a quart of chocolate milk. Oh my! The ultimate in sweet and sour lunches! All the small grocery stores had a big glass jar of pickled bologna sitting on top of the meat cooler/counter. I now have to make my own as I am pretty particular as to the recipe for my pickled bologna. It is nice to see I am not the only one who loves pickled meats.
Now like the good childhood memories like that. Pickle Bologna takes me back to some great wonderful memories. I hope you do make it and let me know. Thanks for watching.
I'm from S.E. Louisiana and had the absolute pleasure of having pickled bologna in Fayetteville Tn., but they put it on a Grill and grilled it. I told 'em "I'd eat the bottom of the jar out of that stuff!" Thanks for posting, and I'm gonna be making this soon!
Never had one grilled. But yes eating them straight out of a jar is best and have some saltine crackers with them. Hope you make them and let me know how they come out.
Thank you sir. I am looking to make my own pickled bologna and yours popped up. As a young man, back in 82, I was working construction, three counties away. Barely pay for gas much less food. On the other side of the parking lot was a liquor store. If you bought something, the old guy would give you a piece of pickled bologna and 2 small pickled eggs and some crackers. Me and a boy I worked with would go there, get a Big Red for 50 cents and he would give us lunch. Thank you for the memories of that little country store. God Bless and stay safe.
I made this well over a month ago with huge hotdog-shaped good quality bologna. I used Kosher salt instead of regular table salt. It;s wonderful--as good as back home in Michigan.
Thank you so much for this. Kentucky girl here (go big blue). I'm in Fl now and you can't find pickled bologna here. When I talk about it I get such strange looks. When my sister comes to visit I always have her bring me a big jar.
My Dad used to work as a butcher at our small town grocery store when I was a kid. He used to make the pickled bologna for the store and at home, too. He had a killer recipe that he kept in his head, never wrote it down. Unfortunately, Dad passed away in 2019. Your method is close to the way Dad did it, I will try it out, thanks for the video
I thought I'd had every country food creation there was but I've never seen pickled bologna! I will be making a batch of this for sure right next to my pickled eggs! Excellent video bud! The days waiting were priceless!
Thank you. I’ve made all sorts of different pickled vegetables, but never bologna. This is definitely a winner! Also, just my opinion, use cheap hot dogs. They taste more like bologna than the expensive all beef hot dogs.
I have been checking a lot of recipes in a lot of them they cook the brine on the stove and then they refrigerate this looks so much simpler I'm going to give it a try thanks for sharing
I like using the Mrs. Wages Kosher Pickle Mix and Hot Links smoked sausages. I stick a knife through the sausages so the juice will soak into them. I fill the jar with Hot Links and onions and put the jar in a pan of water on the stove to heat up. The pickle mix is added to 7 cups water and 3 cups vinegar and brought to a boil. After it has boiled add it to the jar which is already hot in the pan of water. Take it out and put a cloth over the top until it cools and then put the top on the jar. As it cools the sausages suck in the brine and it makes them more flavorful and the onions are really good.
I let mine cool, and then I use my vacuum sealer jar attachment, and vacuum seal the jar, the vacuum allows the wieners to expand and allow the brine solution in. I make 1 quart jars of wieners and veggies for family and some friends, but mine are made SPICY!!
Once you have one you will fall in love. I was raised on these and so many wonderful memories that go along with them. Pickle bologna, saltine crackers and a cold Dr. Pepper.
I want to say thank you so very much. I have been trying to figure out how to make that for a long time now. I love me some pickled bologna. Lived in Tennessee for a while when I was young, we used to buy pickled bologna from a local store that came in glass jars, it looked like giant hotdogs and it was AWESOME, but sadly I don't remember the brand!
Watched your video on making pickled Bologna, does all beef hotdogs do better I think Fishers has changed the Bologna they use doesn't eat the same but thank you for your video going to try it.
Do you have to leave out to be able to process for the 10 days? Is the same brine you would use on eggs? This makes me very happy I have not ate pork since 2007 and there are a few things I have missed since then. Pickled bolonga is one of them!! I can go buy some beef hot dogs tho!! I will be trying this but at a quart which will I am sure be made into a half gallon since I am the only one that eats pickled bolonga!!!
Hey Thanks for watching and yes I leave it out all of the 10 days. Beef hotdogs is a great idea. Yell making a smaller batch just for you is a great idea also. Thanks again for watching.

Wow. I haven’t had pickled bologna in forever. I grew up in Michigan and it was of a staple where I grew up. That and some saltine crackers made my day. I may have to make my own now. However I will add a bit of a kick so I may add a little jalapeño powder.
Boy you hit it on the head. We use to go to the old country store and get pickled bologna, crackers, and a nice cold drink and if it was winter we would sit around the old coal stove and summer we sit in front of the store listening to all the old folks talk. Im reading the jar of pickle crisp, it recommended 1/4TEASPOON for a quart jar. Im assuming your jar is a gallon? So is 2 TABLESPOONS to much? What exactly is pickle crisp and how does it work in this?
When making them I leave them out 10 days and leave them out after but after you make them if you like you can put them in the fridge. Thanks for watching
2 tablespoons salt, cup of water, Gallon of white distilled vinegar. and mixed pickling spice by Ball and also from Ball I added pickle crisp granules. Let is sit for 10 days out in the open and they you will have pickled bologna. Thanks for watching
I have been looking for pickled sausage recipes for a bit now that do not require refrigeration. I cannot find it anywhere. I notice in yours you dont require it, but you show in your video a piece of bologna that is above the liquid level in your jar. And your jar is not sealed at all. It was the first piece you pick out and eat after the 10 days. Am I missing something? This is not a good thing, especially if not refrigerated. All the meat must be under the brine and not in the open air space. Love the simple recipe, but would be worried about the pieces that are not fully under the brine

If it’s under a ph of 4 it is shelf stable at room temp. Vinegar had a ph around 2 so it should be fine sitting out
