    I've used this recipe twice now to make almond biscuits instead of biscotti. There is one ingredient alteration - switch out the 1 cup of almonds for 1 cup of almond meal and it makes fantastic crunchy almond biscuits, just as good as biscotti. Instead of forming two loaves, shape the dough into small balls, flatten with a fork on the tray and bake in the oven at 180c just the once. It is less trouble than biscotti and they are just as delicious. Thank you for the recipe.

    I made this biscotti this morning and it is the first time I made almond biscotti. I let it bake too long the first bake but I could still slice it into wedges. Next time I will make sure the first bake isn't beyond 20 minutes. It came out pretty good. I toasted the almonds in a 325 degree oven for 20 minutes but that was the only change I made to the recipe. I recommend other 'first time biscotti bakers' to try this recipe. I priced biscotti and it is quite expensive. Better to bake your own and enjoy the treat without the expense. Furthermore, some recipes called for twice as much sugar, but too much sugar isn't necessary. Thanks to this baker for sharing this easy recipe. Ciao!

    I tried this recipe yesterday and it came out really yummy. I made few changes though. I roasted the almonds in the oven for 8 minutes and I added 3/4 cup of almond and 1/4 cup of dried blueberry. It was real good. I also put the biscotti in the oven for 8 minutes and it was really good. Thank you for sharing all these amazing recipes. People around me are so impressed! 😊

    As you say, easy and delicious! I love nuts and I am glad you posted this quick and no fail recipe and method! I have had biscotti back in my home country many many times at coffee shops but this is the very first time I home made them.
    This is my to go recipe from now on! They are not hard ones like some I have tried in the past LOL... very well done as usual!

    I grew tired of paying $4 a box for Nonni's biscotti at my grocery store, so decided to try homemade. LOVE these biscotti ... but the dough was too sloppy for me to handle with melted butter. Tried it with room temperature butter next time, and it worked perfectly. This recipe makes up beautifully and tastes spectacular. I'll never again buy ready-made.

    After a year of making and loving these biscotti, I had to give up nuts … sigh. But I couldn't imagine giving up biscotti, so tried making them without almonds, and by gum, they're still delicious and satisfying.

    Do you need to dry roast the almond before mixing them into the dough or can I add in the almonds straightaway without roasting.

    Had the most delicious Biscotti yesterday. They where soft yet firm and had a great Almond flavor. When I made Biscotti they are hard. What am I doing wrong? Can I use Almond paste?

      Hi Saby Soto 😁 I hope your day was filled with fun and chocolate !
      You don't need to add any almond paste, all you need to do is bake them for a shorter time in your oven. Biscotti are mostly a very firm dry cookie... they really should be. They are very often dipped into a cup of coffee to soften, then take a bite. Soft usually something somebody bought in a package, or the bakery is baking them for less time. If you ask biscotti lovers, you will see all of them will argue that they should be firm. You should be able to snap them. It really depends on what you like. Biscotti means "twice baked" so the end result should be a very dry crisp cookie. If you wish to have something more traditional, I have many other recipes here on my TH-cam channel.

      SAFAA Abusareis You may use raw almonds if you wish or you can take them and just gently toast them in a fry pan for a few minutes. Any way you wish to do it is fine.

      lany chanthlaty Hi Lany, these cookies, you can keep in an airtight container for a month. More if you wanted. They don't go bad. The moisture level in them is very low ( they are a crisp dry cookie ) You can eat these with ice cream, or with coffee in the day, dip one into your coffee, and then bit it... yummy :-)

    Hi dear.. i have a question... when i baked almond biscotti for the first time it turned out great, but the last 3 times it started burning on from bottom after 7-8 mins..i tried alternatives like bit low temp or shifting plates of oven .. but no luck...what could it possibly be?
    PS. love your recipes.. baking became love because of you :)

      Maybe it's bc he had a silicone mat on his tray instead of putting it directly on the metal. Just a thought. =)

      I used parchment in the pan for a very long time with great results. Then I switched to a Silpat mat, and my first batch was way overdone. Next time I baked the second stage for only 15 minutes -- perfect!

    Where I live can't find whole almonds. Can I use 1 cup of slice almonds instead?

    i made my first batch today. Great flavor but I end up having the nuts tear the dough when I cut them for the second baking. I'll probably have to go with chopped or sliced almonds next time. The nuts just move or snag and tear. My knife was sharp I thought. How do you do this part of the recipe?

      Hi there, a serrated knife is the only way to go. A regular knife, even if very sharp will push the nut instead of slicing through it, as the dough is not as firm as your cutting board on a work table. A serrated knife cuts through nuts with ease without moving them.

    Wondering why you didn't also bake the other side of the cookies after they were sliced? We always cooked both sides growing up.

      Hi TheBluewaterBlonde, if you grew up with mom doing it that way, please do continue do do it that way. In reality, the bottom of that cookie does get baked as it is in direct contact with the bottom of the pan. If you bake a chocolate chip cookie for example, after they bake and cool, flip one over to see evidence of this. Flat, crisp and golden brown. In my book mom is always right, so keep doing it her way. 👍😊

    I tried your recipe but when I started to slice the biscotti as per your directions, the biscotti started to fall apart! I think next time I will use sliced almonds and toast them. What did survive were very delicious. **Maybe my bread knife wasn't as sharp as yours**

      Hi there ! 😁 If you were not using a serrated knife, this can cause your cookies to fall apart. If you don't have a serrated knife, the next time you try these, you can bake them for less time, and that will keep them a bit more soft ( the loaf will still contain more moisture ) and this will left you cut them easier. The serrate knife really is a life saver with a recipe like this. I'm glad what you were able to save was good ! Thanks so much for watching, I really appreciate it ! 👍😁😊

      Baked 2 batches of your biscottis recipe today, back to back, for Fathers Day. Both times they fell apart maybe because of not having a serrated knife. Though I sliced the almonds fine the second time still slicing was not as neat. The taste is very authentic and yum. wondering what went wrong.. besides the knife.

    The recipe looked super easy, but unfortunately my biscotti did not come out anything like yours. They were impossible to cut after the first baking, they all fell apart, and although I exactly followed the recipe, they tasted bland and it just did not work for me. I will try Wanda Yonder's (reviewer) suggestions to use almond meal instead, and hopefully that will work.

      Hi Andrea, if your recipe fell apart when trying to cut them, this tells me they were much too dry, - meaning they were baked far long or - your oven was set too high. Perhaps you used a *convection* mode, or you didn't pre-heat your oven. I've done this recipe too many times to count and it is always the same. So if your ingredients were exact, then it's the technique. You can try changing the ingredients but this won't change anything. It's your oven / timing that is not correct. If they are "bland" this would mean you didn't add enough sugar, or perhaps not enough almond. It's so hard to diagnose a problem in a comment like this, I wish I could help you more. To end off, you said they fell apart and were impossible to cut - this can only mean one thing, the cookie "loaf" was dry, which can only mean it was baked far too long.... anyway, don't give up..... you will get better the second time around.

    Why is it that after baking the first time my biscotti log was still soft to cut it kept crumbling all over.. :( plus I baked an additional 15 minutes so it's 40 minutes!
