Trained cook here: Well done! Winging it with baking is risky, but your instincts are good, so you got the intended result. Almond milk adds a rich mouthfeel straight coffee won't, so I'd recommend a generous pinch of espresso powder to the coffee step next time. P.S. A standard coffee cake, because it's a dense batter, generally bakes for the better part of an hour anyhow. Thanks for posting : )
yes, to all above (baker here).....most coffee cakes do not actually have coffee in them. they are called that because you eat them WITH coffee. definitely, bake an hour. i wouldnt even do the "crumble" topping. you have a cross between a coffee cake and a strudel topped bundt cake. either way, it'll taste good. happy baking... :)
I didn't think coffee cake actually tasted like coffee. I thought it was just supposed to be eaten with coffee. Seems like real authentic coffee cake to me.
You are correct in that is what is typically a coffee cake, but I love coffee and cake so looking forward to this as I have been craving a vegan tiramisu. This will do.
It can be both - with coffee or to be served with coffee. Some quick googling shows the origins with coffee in the cake implying that coffee cake is with coffee. After all wouldn't every cake be coffee cake if it meant served with coffee?
I guess I'm old enough to remember... coffee cake is kind of the American version of tea cake. It was a simple single layer cake, spices and nuts but no icing that ladies served at "coffees"... similar to tea parties, but the 60"s Jet Set/Jackie O version. No coffee in the cake.
I like how most of your videos have really simple recipes, because some vegan recipes have things that I have to search online for but always forget to.
I love the way you explained about the acidity to help the baking soda, the white flour making the cake more moist. That's great knowledge :) Thank you!
UK coffee cake will definitely have coffee in it & probably walnuts too +/- a buttercream topping & its delicious!! Great recipe Lauren I will definitely make this!! 😍
I was seriously thinking of coffee cake this morning, and wondered how I was going to have vegan cake for my birthday this year I have coffee cake every year my favorite . But you came through as always! Thank you Lauren !!!
I LOVE RECIPE?!S. I totally do this all the time Lauren. I just start grabbing stuff in my kitchen and testing it out, all because of you! (and John, haha). Thanks for another one! I'm making this this weekend for my fam.
Great video, got me inspired to make a coffee cake myself today...just some suggestions i worked out...If you use espresso (I used a hazelnut flavoured one) instead of coffee it gives the cake a lot stronger of a coffee flavour. Also for the crumble on top I used some melted earth balance butter to make it more like a streusel topping. Thanks for sharing!
I love your little stories and inspirations that go along with your ambitions when you cook :) Growing up my mom would make a coffee cake but it was more like an apple cake but once I was vegan, because the recipe had apples when we tried it made vegan it worked out the same! Yours looks great! I was laughing how you used up all you had of most of your ingredients :P
True, it may be different for different places, idk. For me it's just a moist cake with many spices like cinnamon, nutmeg, cloves, ginger etc. and a rich crispy crust.
Yea in the US it's usually a brown sugary cake with a cinnamon-y crumbly topping. But, I still think this is technically a "coffee" cake because it's flavored with coffee. Two different meanings lol
Lauren i love watching you guys but when i started following you on your personal channel i knew you looked familiar being a fellow Canadian i seen bits of you when i still had cable on much music its really cool on all you do keep up the great work
Made it last week, but i put loads if icing on it too 😊 i think it's the best cake i've ever eaten.... My non vegan friends loved it just as much as i did! ❤️ thanks Lauren
I have made so many recipes from you and everyone has been so good. I made this and and loved it. My husband flipped! I did use coffee...I put in cold brew from the fridge. I set the timer for an hour and it was done..The glaze was so easy to make!
I made this cake tonight and made a few changes. More Wheat Flour and reg flour. Used nuts and shredded coconut. Also used greek vanilla yogurt and splenda instead of white sugar and this kitchen smell like cinnamon love!!!! Sooo good. Cant wait to taste it but dont wanna burn my mouth. Lol
Lauren you are so frickin amazing ! I love watching your videos they are so inspiring and make me exited to be a vegan and still get to try amazing new recipes ! Please keep doing what you're doing because you're awesome at it ❤️❤️
made this for mothers day today. seriously good! I used a couple more tbs of coconut oil, and 1 cup coffee, 1/4 cup soy milk. it had a good amount of coffee flavor. it's so good thanks!
Cakes looks so good and yes instant coffee will give you a more concentrated flavor but keep your almond milk. The crumble topping needed to be moistened a little more so not to fall out of place when cutting. Great job non baker...Namaste
lately I've been trying vegan baking and mastering vegan baking is my goal for this holidays :D and my tip is that u can make the best creams using coconut milk, you simply whisk the hard part with some icing sugar and lemon juice :)
Looks delish! Adding some oats would make a great crumb/crisp topping. I've never known coffee cake to have coffee in it but I love coffee flavoured anything!
That looks delicious! ! Ima make this for our tee time! I'm gonna add some pecans though, I think that would give it a really nice crunch and texture! ♡
i didn't have coconut yogurt and had this weird urge to add 1/3 cup of ginger ale instead.. and it turned out great lol. i'll be making this again and again for sure
Just made this, it was sooo delicious! Even though I didn't have all the ingredients, we still made it work. (I didn't have yogurt so I used 2 flax "eggs", only had balsamic vinegar, didn't have coconut oil so I used vegan butter, and in the frosting instead of vanilla I used coffee and because I only had vanilla almond milk ;) )
before i went vegan, i did a lot of research. when i heard sugar isn't vegan i literally died and got so upset, thought i'd never be vegan. turns out, canada doesn't really ever use bone char, and the only brand i use is redpath and they state they are 100% vegan on their website! it's so amazing :D i went vegan shortly after
Lauren did you see that Nikki Limo made hff's crab cakes recipe ? she loved it !! I kinda want to take credit for it because I was one of those who suggested it to her hehe ;)
I'm glad to say that I'm positive I will become vegan soon because of what you guys make on this channel and watching Lauren's WIAIAD, thanks for not just making fruit salad or eating 12 bananas you guys are awesome
I see there are places in the world where coffee cake isn't made with/doesn't taste like coffee but all the coffee cakes I've had --- definitely use coffee or espresso for flavour. 😊 I don't drink coffee but have always enjoyed coffee flavour in cake - and tiramisu!
Lauren your so cute and amazing you should have a meet greet in the fall would love to see you in person and hear you talk in person about vegan recepies, love all the recipes
It looks AMAZING!! I will say that growing up, "coffee cake" didn't taste like coffee ... it was more of a sweet cake to enjoy WITH coffee. I cannot wait to try it.
Loved this video, I was wondering why I've not come back to your channel for a while I MISSED A LOT OF THINGS !!!! Have to watch it !!! This cake looks sooooo goooooood !!! For more coffee taste I think if you add coffee/expresso powder to the dry ingredients it will be more coffeer ;) Love ya
Lauren you should poke heaps of holes in it with a skewer then pour a couple of tablespoons of the leftover pressed coffee in- then the whole cake will have more coffee flavour. 👍
I'd use some Espresso powder (instant espresso powder), makes the taste much stronger, I use it in chocolate espresso cupcakes and it's delicious then :) The cake looks amazing as is though, can't wait to make it some time.
Hi Lauren! Can you do recipes using coconut flour? I bought a big thing of it a long time ago but haven't come across a good recipe to use it since it's REALLY absorbent. i.e. I can't substitute as regular white flour! Thanks a bunch :)
I used it in my carrot cake recipe. It's a little grainy, but still turned out great. I didn't mind it. I wanted to do something for the ppl who can't eat all purpose. So it would probably work here too . Might be a tad drier as well, so not sure if you'd have to adjust the measurements?!
+hot for food I do grain free/vegan baking and I find that coconut flour is kind of gross by itself but it works really well when you use it with almond flour and arrowroot starch. If I'm replacing all purpose flour, I'll usually do (per cup of ap) 2 tbsp coconut flour, 2 tbsp arrowroot, and 3/4 cup almond flour. It doesn't work all the time, but it's a really good starting point and almost always does the trick. Just a tip!
Yuuum coffee cake has been a favorite of mine since I was young. I would say that the cake doesn't necessarily need to taste like coffee at all since I will most definitely be drinking coffee while I eat it. I love how the bitterness of my coffee cuts the sweetness of the cake. Bite, sip, bite, sip... you get the idea ;)
Will be trying this soon! Probably using coffee in the frosting instead of milk and also make stronger coffee to go in the cake. That should enhance the coffee flavour :)
Trained cook here: Well done! Winging it with baking is risky, but your instincts are good, so you got the intended result. Almond milk adds a rich mouthfeel straight coffee won't, so I'd recommend a generous pinch of espresso powder to the coffee step next time. P.S. OHHHH thank you for chiming in!!! YAY me ;)

This will do.
in the UK a coffee cake always includes coffee, I was always really confused when I found a US recipe for 'coffee cake' with no coffee in!
It can be both - with coffee or to be served with coffee. Some quick googling shows the origins with coffee in the cake implying that coffee cake is with coffee. After all wouldn't every cake be coffee cake if it meant served with coffee?
i agree! I've never seen actual coffee used in coffee cake recipes! i freaking coffee cake!
I made this, but I used vegan butter instead of coconut oil. It was so delicious!!
I like how most of your videos have really simple recipes,

Great video, got me inspired to make a coffee cake myself today...just some suggestions i worked out...If you use espresso (I used a hazelnut flavoured one) instead of coffee it gives the cake a lot stronger of a coffee flavour. Also for the crumble on top I used some melted earth balance butter to make it more like a streusel topping. Thanks for sharing!

This looks sooo good! Brb. Gonna make this!
AH! I have all of these ingredients in my house! Totally making this after work :D
Lauren you should poke heaps of holes in it with a skewer then pour a couple of tablespoons of the leftover pressed coffee in- then the whole cake will have more coffee flavour. 👍
Looks delicious. It looks like it came out just fine. I would try it.
Haha the way she said "Recipe" every time!

+hot for food If coconut flour is dry, how about using fresh coconut meat of non young coconuts... tastes awesome
Hahaha love this kind of cooking 😂😄 just roll with iT :P always amazed at what you make at the moment out of scratch ! 💚
Yuuum coffee cake has been a favorite of mine since I was young. I would say that the cake doesn't necessarily need to taste like coffee at all since I will most definitely be drinking coffee while I eat it. I love how the bitterness of my coffee cuts the sweetness of the cake. Bite, sip, bite, sip... you get the idea ;)
i've started to add a little salt to my icing or frosting and it makes it so much better! 😄
I love these videos !!!!
it looks so beautiful!!!
This is literally in my oven right now, I didn't have any yoghurt so I used banana/peanut butter instead. praying that it turns out ok 🙏
Yesss, thank you! I LOVE coffee cake!
Will be trying this soon! Probably using coffee in the frosting instead of milk and also make stronger coffee to go in the cake. That should enhance the coffee flavour :)
Mmmmmmm! Definitely will try this!... I bet using really strong espresso coffee would give a stronger coffee taste!
