Very nice recipe. I knew this stew before and made it many times. However, I followed this instruction since there is some tweaks which I liked. And it turned out really nice! . A real upgrade to something that I already had liked before. Thank you!

Make sure to remove the stringy part of celery by pulling from the top joint down otherwise when you bite you end up struggling with them in your mouth. It makes celery more palatable. I personally would cut celery only two finger width than this gentleman has shown, easier to chew and swallow. It's a gorgeous tasting recipe with enough fiber for those who need it.
Salt pulls the juices out of the meat causing it to become dry...adding salt towards the end of the cooking when the meat is basically done...adds the flavor without depriving the meat of its natural juices

You can try but some Iranian foods work better with dried.
