Yeah, Peroni is pretty solid. If that's the one of the best beers you've tried then you are going to have a great future, my friend :) I'm from NZ and we go crazy with the craft beers over here. Some of them are actually good too haha. I don't know where you are living are but the Emerson's range is quite nice and rustic tasting. There's also an Australian group, Cooper's, which does a great stout. I introduced my boyfriend to it when we started dating and he loves it and remarks that it's better than Guinness. Of course, for more money you might find some amazing stuff, but I'm always looking for something special and good value for money!

Whoa that's a lot of bugs in your pilsner malt at 00:19-00:26! How'd you get them out before brewing or was it just bonus protein ;-) Anyway, I really like your simplistic approach on equipment, recipes and video format and I will try making this stout very soon, just ordered the ingredients :-) it looks awesome, and I know I will try your Belgian Triple too as I've already made enough candi sugar for both, of course following your video on that :-) About to the candi sugar making video btw if it can help others, just because it didn't seem clear to me, is that it's necessary to raise the temperature at the end of boiling, close to 150°C in order to make it harden completely after cooling down. Mine turned out quite soft the first time and needed to re-cook it. Anyway great content and I'm looking forward to more! :-) Subbed!

Can you tell me what are you doing with collected yeast?
    Should malt be grounded before?
Also, what kind of yeast is best for stouts? I found article stating that safale s-04 and us-05 are best, but it says 5-8g/10l, and in this case it is a bit more.
I've never brewed a beer, but I want to give this a try because I love stouts :)

@@Spectacular-cuoredicioccolato So, I put my first batch on last saturday, and I will bottle it on this saturday. Bubbling slowed down a lot and I got no gravity meter to check if it was done with fermentation so I will go with luck :)
One more question: Can I use grape sugar (dextrose) instead of regular sugar for bottling? I've read somewhere that dextrose is better than regular sugar for yeast.

Just opened the bottle of stout made according to your recipe. It is really spectacular, this is my first time of brewing and I'm very much surprised by high quality of the product and great taste. The only little problem I have is that the beer was over carbonated - it splashed out of the bottle like champange in hands of formula 1 champion and in the glass the beer is completely still, no sparkling at all. Can you please suggest any improvements I can do to fix this?

Was all the grain put through a grinder to break it up coarsely?
You added the sugar after the wort was cooled?

I would have added the sugar during the boiling stage.

Instead of carbonate with CO2, try nitrogen. Even Pepsi looks like Guinness.

At 7.5%, that's not really an Irish Stout.

  • @georgerigberg4335

Check your BJCP categories. This isn't an Irish Stout or even an Irish Extra Stout. Would lose points in a competition for too high an ABV. May be a tasty recipe, but should be entered as a Foreign Export Stout. Don't misinform the public if you don't know what you are talking about!

@@Spectacular-cuoredicioccolato my pleasure. I've done a half dozen of your cured meats exactly as your recipe states and they are wonderful, I've just made one of my own recipe using some spice from the famous S.A. biltong recipe an friend from work have me.
I used to brew beer a lot before having children. After 5 years away from brewing, now your videos inspired me to brew small batches of beer again. I've got a delicious belgium dark with candi sugar, a hefeweizen and a belgium golden strong all in the bottle conditioning phase!
