Something you can do to adjust the difficulty in the game is changing the sliders, it’s useful because you can directly adjust different parts of the game that you feel need to be effected. For example WR catching can be increased to help with dumb drops. You could also increase things like QB accuracy and other stuff to effect minor parts of the game. Could take a while to get the perfect settings but it can be nice.

Adjust the sliders. You can keep adjusting them in case you over adjust, but it makes it so much more fun.

If you turn minimum speed threshold to 0 then players that shouldn’t catch faster players won’t catch them as much anymore, I do it for every league I do and I recommend it after seeing you mention it in the 1st quarter at Dallas

You should change your defensive playbook to something like the Baltimore playbook. It really affects how well your defense plays in the sim. If you don’t want your defense to get shit on I would probably change it from the Vikings playbook
