What is an organ on a chip and how does it work?

In 2015 Museum of Modern Art in New York added an intriguing object to their, at the time, permanent collection. A clear, plastic chip, no bigger than a memory stick - one which could change the way scientists develop and test life saving medicines and enhance their understanding of systemic effects of human diseases.
THESE are ‘organs on a chip’ , designed to mimic in the lab how our organs function. But, how do they actually work?
