Imagine being the Executive Chef at Spago Beverly Hills and now you gotta come here and just shave pounds of truffle

Also being trusted to shave pounds of truffle is a massive responsability. It's thousands upon thousands of dollars of product, you wouldn't want just anyone dealing with that.

I really learned how good Wolfgang Puck is not just by eating at one of his restaurants (Five Sixty in Dallas) but seeing him on Iron Chef. He calmly went about his business, never panicked, effectively communicated with his assistants and won - almost made it seem like it wasn't a challenge (although I'm sure it was, even for him.)
