  • In this video I will be showing you how to make a Green Hatch. Chile Chicken Casserole using leftover rotisserie chicken, hatch chilis, homemade enchilada sauce, white cheddar and red onion. I will be making this on the yoder ys640 at 350 degrees. I will finish it off with some cilantro and green onion. I hope you enjoy and please don't forget to subscribe!!

    IT IS THE BEST IN NEW MEXICO! It’s a 1 hour and 30 minutes from where I live (EL PASO,TX) Take a trip out there, you’ll enjoy it!

    A couple of days ago I was thinking that I haven’t made enchiladas in a while.
    I like your recipe. Kinda like stacked enchiladas at the restaurant.
    Going to the store today. I will get the ingredients.
    By the way, I have lived in New Mexico for 20 years now. Green chile is a culture. When they come in, there’s often a like outside waiting for the burlap bag full of chile to be roasted.

      Nina- I just ordered 20 lbs of hot Hatch green chile from Lujan Farms!! It was worth the $108 - I’m living in West Virginia now, and believe me- I wasn’t about to go a winter without having a stocked freezer. New Mexico will always be home ❤️

    AMAZING! DELICIOOUS! I made this last night and the whole family loved it! I used a jar of salsa verde on the bottom of a 16 inch skillwt and 3 chicken breast. Cream of Mushroom soup? Who would have thought! I kept watching your beer and you neveer touched it! A definite make again dinner. My son had some leftovers today and put it in the remaining tortillas. Thanks my friend!

    Green chili is one of favorites! We freeze ours just as you said and throughout the year make quesadillas, and other tasty treats😁

    fry your tortillas just a bit in hot oil and they will stay together much better and not get all mushy.

    I love the video but lol ur exaggerating on the chili love just a tiny bit lol
    We don't necessarily have big "festivals" or "parties". Maybe ur friends do, idk ur friends. Ite more like this:
    In the late summer and early fall hatch green chili is now in season in New Mexico so farmers begin delivering their fresh chili's to vendors all over new mexico (and now to other states as well)
    Yes this is exciting for the same reason that any vegetable season is. People DO flock to stores to get large orders of green chili's, some stores will roast them for you and even in front of you or you can buy the raw Chilis and take them home to roast urself. And yes the idea is to have enough in ur freezer to last at least the winter and hopefully until the next season. But like any vegetable and thanks to modern agriculture practices and corporations u can enjoy these all year round in multiple states. However, it's better in the season and it is part of our local culture.
    Yes we do celebrate it but calling it a cult is a little extreme. "Red or green" is a common question you will hear eating out in New Mexico all year round. We have pride in our chili's the same way that California has pride in their avocados and the same way other states have pride in their dairy (winsconsin) and fruits and vegetables and even live stock (Britain for example is huge in their British beef, Texas is huge on their Angus beef,) so to compare it to a cult is a bit unfair. It's nothing u wouldn't see in any other state. Every region has their own unique culture and gastronomy. In New Mexico we have New Mexican food and chili is a big part of that, obviously. It's part of our unique blend ofSpanish, hispanic and native American cultures that all contribute to this. It is special to us.
    As for "festivals" it's more like people just being exciting and going to the store.
    We do have things like the Balloon Fiesta in Albuquerque (our biggest city where I'm from) but that's not really about food it's more of a tourist attraction where food vendors might be present like the state fair for example. Then ull occasionally see chili contests but it's not a big deal as u might think. I've actually been kinda disappointed in this cuz you would think our chili cooking contests would be popular but they're really not. I think that's because people confuse our chili with Texas Chile and such a contest would see people bringing in Texas style Chile. But I digress on that.
    All in all it's something that people are enthusiastic about but I think ur exaggerating the point made by ur friends from New Mexico.

    On the casserole:
    This is a fantastic rendition of casserole enchiladas and is a very popular treat here in NM especially with younger generations who grew up on it. Bonus points for using authentic new mexico chili and knowing the difference between that and Anaheim peppers.
    And extra bonus points for roasting them yourself. It's not "cultural appropriation" when done right :)
    I myself am looking for a not so traditional way to Cook casserole enchiladas because at home my oven went out. A local New mexican cook book I have suggests it can be done using an electric skillet. So that's how I personally came across ur video and was actually impressed although it was not exactly what I was looking for I think I can use what u showed to accomplish my goal.
    As a local chef from albuquerque I give ur recipe and presentation an A+ even with my gripe about the "cult of green chili" which I take with humor. Excellent job. Ur sub and like is well earned with this one.

      I’ve never actually been to New Mexico, so all the info I get is from my friends. Maybe they are embellishing a little lol. But I just know how excited they get every year when it’s chili season. I’m sooo glad you enjoyed the video and that you took the time to write such a great response means a lot.
