Publix has fresh whole New Mexico Hatch green chilis in stock currently. Bought 3 bags I roasted and skinned. Made chili rellenos with a pepper jack shrimp and crab stuffing. Absolutely delicious!!! Jeni a easy little tip after your chili’s 🌶 are roasted place them in a plastic bag and then in a bowl and cover them with a dish towel for about 20 to 30 mins or until cool enough to handle . The peels come off really easy .

Here in Austin, Whole Foods Market uses a giant roaster outside in the parking lot and you can smell the chilies before you even see the store. I was wondering how long the green chili sauce lasts in the fridge, that stupid too precious to not be able to use it all and end up having to discard it.
The easiest way to prep the chiles is to buy the frozen Hatch Chile in the freezer section at Walmart. 2020 was a terrible year for the New Mexico green chile harvest because of the lack of pickers, lack of tourists, lack of all things necessary for the harvest due to Covid 19. What a pistol. So you might want to stock up a little. When I clean fresh roasted ones I pinch them at the stem and pull all the seeds right out. As for the garlic, I buy the large bags at Sam's/Costco that are already cleaned and I keep them in the freezer. I subscribed to your channel, maybe you might want to visit mine. I just bought 10lbs at kroger & processed yesterday. I grew up in Kentucky but my aunt, who I visited frequently as a child, lived in New Mexico. I love green chilies and I’m so thankful that Kroger started bringing them to the Southeast

I'm peeling green chile today, when i do I put it in the sink with running water over a colander so the seeds and peels do not go down the sink. Water helps wash away the peels.

Nope! We eat it right away out of the blender. No vinegar. It will last 2 weeks in the fridge. I will heat it up in a tablespoon of oil for 5 minutes if I’m going to make enchiladas or huevos divorciados., 😊
At 4:26 you asked for an easier way to do garlic. Cut off the root end of each clove and roast them in their paper. When roasted they will easily squeeze out of the paper.

During hatch chili season our grocery store has huge tumblers out front and will roast however many you want
