Why as a grown 63 year old man do I get emotional (can't say cry...) when I watch this video? Born in Albuquerque, raised in Santa Fe until I was eight. Have lived all over the world since. Like your stepdad said, it depends on what I feel like that day. I use green for our chicken enchilada casserole and my chicken posole blanco, usually red for beef and pork dishes although pork I go either way, depending. I made a Pueblo style red chile and pork stew with powder from the Fruit Basket a couple months back based on the Pueblo traditional ways of doing it (didn't have pan de horno though so I made fry bread instead). It was killer! I usually go beef with my green chile stew verses pork. Down to my last bag of green for the year and it's May! Thankfully our Mexican markets here sell New Mexico red and Safeway has roastings every year now for the green. Missed the roasting last year because I was sick so we had to piecemeal our supply from different stores around town. Wasn't enough and most of it was mild 😞. I package my green chiles sideways in a large freezer bag (about eight or ten in each) and then roll them to get most of the air out. Then I put those in another bag and roll that too. It saves space since we have a side by side fridge. Easier cutting too as I usually cut them while they're still semi-frozen, two cuts lengthwise and then slice across. By the way, I'm a wimp right there with you on the gloves. One year we didn't have them and had hot and extra hot. Our hands were literally burning for two days. Hats off to your mom. I have a pipe dream of going down to Hatch one day in our VW camper named Devon but both he and I are fairly broken down nowadays. Sorry, sometimes when I write I get on a roll without brakes, just like the camper.... Thanks for the memories. Cheers!

Now you make me want to go to New Mexico! My Hatch chile comes to Whittier, CA, every year, and we get it roasted there and home to package up for freezer. I know how it feels to be down to your last bag too soon. Hang in there, you and your VW will make it one day, as will we ❤😊
NM born and raised. My first memory of eating chile was at about 3 years old. My mom would make carne adovada or chile con papas or enchiladas, or whatever chile food; and being the loving mother that she is, would put the meat or potato or whatever in her mouth to take off some of the chile for me. She was kind of like a momma bird feeding her baby bird. That may sound strange or even gross to some, but if you understood that we all ate what was served; and every meal included chile, beans and fresh tortillas along with tacos or enchiladas or whatever. Sometimes it was only beans and chile and tortillas. I grew up in the central part of the state where I still go to buy my green chile - the Rosales' and Sichlers' farms are my faves. I like the red from the back roads off I-25 in Arrey, Garfield, Hatch...... I've enjoyed eating at Chopes, La Posta, the Buckhorn, Sofia's, and so many places throughout the state - my favorites though being my Mom's and my own kitchen. This is already long and I apologize. The point: I guess what want to tell you is how much I truly appreciate this video. I was flooded with so many beautiful memories from way past and some as recent as yesterday. Thank you. And for me, my favorite chile will always be New Mexico Chile red and green. ❤💚

I love both, I learned my mom's recipes that I grew up with. She was from Roswell, so she cooked that NM way. It wasn't till I got older that I truly came to appreciate NM cooking and chile! I live in California, but every year, I make both red and green chile tamales like mom did. Everyone loves them and the distinct flavors! Once you try NM chile, there's no substitute.

Born and raised in New Mexico, NMSU grad, work transferred me to the south east, I miss going to the Hatch Chile festival every year! Whenever a local grocery store gets fresh Hatch chile I buy about 200 pounds of it and roast it at home (they have no clue on how to roast it properly here) because I never know when it will be available again. I just found your channel a couple of days ago, already subbed, love your videos and makes me miss home more and more with each one that I watch. Keep it up!

I made some Green chicken enchiladas with Hatch Chile. I mixed it with medium & hot Hatch Chile, garlic & onion powder & fresh as well 🧅 & 🧄 cilantro 🌿 & a teaspoon of salt & cumin. Some Tomatillos about 6 of them, sour cream & cream of chicken. Blend all together, that’s how my mother would make her sauce for green chicken enchiladas. Much Love From El Paso,Tx
I also grew up in NM and am also a chile snob, I run my chile through my meat grinder and pack in into 4 oz containers with lids. It works out perfect for my husband & I, this year I did two bushels and got 104 containers of chile. When I need it, it is already chopped and ready to use.
I grow hatch chile here in the high dessert of Reno Nv. We have sandy soil that drains well and the Hatch chile grows well once you get it started and going. I first tried Hatch chile in Riverton Wy, my inlaws are from New Mexico and they moved to Wyoming when they were young. I have been hooked ever since. Green is my color of choice and mild is perfect, a little heat and lots of flavor.

I live in between the Hatch Valley in New Mexico and the Mission Valley in West Texas. Before Hatch got all snobby, they used to have the Hatch vs San Elizario chile war. Now just called "the red and green chile war" the Indio in West Texas take growing peppers seriously.
Just spent the weekend in Santa Fe and picked up a couple ristas at Sprouts (1/3 of the price at the plaza) so I was here learning about them. As Arizonans, we are already in love with Hatch chiles and grateful they're brought to our community every year.
I grew up around there too, your video is great and really makes me want to visit again. My mom knew the owner of La Posta and she would join us at the table during our dinner sometimes. I was enchanted by all the parrots in the entry atrium as a kid in the '70's. Glad i found your channel

I can totally relate. I lived in Sacramento for many years and my house was the only one with a ristra hanging out front. I once put up luminarias at Christmastime, and my neighbors weren't sure what to think. Lol Thanks for the comment.
Friends used to think I was nuts to make the run from Tucson to Hatch for bags of green chiles and Sparky's. They would tell me when in season, one can get the canvas bags of Hatch green chilies here in Tucson and have them roasted out front at grocery store.... And they're right. Same Hatch green chilies, same style of roasters.... And I tell them... yep I could do that. But... It's a great road trip, nothing beats fresh from the field produce... And then you have Sparky's! I do love Tucson, however, Tucson does not have Sparky's! (Although we do now have Blakes. Blake's green chile cheeseburger is really really good, highly recommended, although Sparky's is better). And, the drive back. The smell of freshly roasted green chilies filling the car, it's a little piece of heaven.
Oh my goodness! I feel like I know you! That's my philosophy. I can, of course, buy chile at the grocery store, but it's so much fun going in person for the full experience...and then grabbing a green chile cheeseburger at Sparky's afterwards. Didn't know Tuscon has a Blakes. One more reason to love Tucson, though I haven't been in quite a while. For so many years there was constant freeway construction, so I started driving through Globe instead of staying on I-10. May have to change that now. Thanks for the comment.

Aww, your parents are so beautiful! I'd be a chili snob too if I grew up there. Whenever I watch your videos about the southwest I get homesick. I left California 30 years ago and never looked back. I don't miss the problems, but I miss the dry weather, the mountains, and mostly the really unequaled southwest Mexican food I grew up with. All the very best to you!

Green for breakfast and red for dinner. But my vote is for green chile recipes, to help you use them all before the next harvest. I don't like to run out but I probably will this year. I bought the hot ones this time and they have really upped my kitchen game. Thankfully they bring them and the roasters here to Dallas every year, because that's a serious road trip for groceries. Since about 2000 ALL the Central Market grocery stores (high end HEBs) in Texas have a "Hatch Chile Festival" every year and trust me, they have gone WAY overboard with it. They manage to put the green chilies in EVERYTHING. They import a number of 18 wheelers bringing the chiles and all roast on site BUT very few of them actually have guys that KNOW how to roast them. As you know its an ART to blast the flames for the right amount of time to make the chilies pliable and able to peel but not torched to death. I still drive 600 miles to Lujan farms most years because the roasting here in Austin is so inconsistent. We are even looking to move to Las Cruces!

I grew up in Grants, NM in the '60's. I knew about Lotaburger before I ever heard of McDonalds or other chains. Thankfully, since I live in Tucson now, Lotaburger has expanded to three places here. Reminds me of being a kid again.
Would love Hatch New Mexico and Sparky's. Now, I know you are from New Mexico. It is great to keep your tradition of New Mexico no matter where you live. Some families freeze their Chile's unpeeled. I have tried to peel them before I have froze them before and it took me forever. You gave me the idea of putting ice on them. I will try to get the ice put on them when I get them home and they are freshly roasted. Thank you for that idea. To answer your question come up both, red and green. I guess you call it Christmas.

CHRISTMAS!!! It really depends on how I'm feeling. At home in California, i most eat green chile from my frozen stash. 😃 When visiting back home in NM, I eat red EVERY day!!! 😋
After my dad retired from the Air Force in 1967, he and my mom decided to retire to New Mexico--without ever having been there. We moved to Santa Fe, and I loved the culture and food immediately. At that time Hatch chiles were basically unknown anywhere outside of the state itself, now they are world famous and sought after. I live in Arizona, but I make it over to visit my beloved New Mexico several times a year, and when it's Hatch harvest season, I stock up. By the way, I visited Hatch itself for the first time earlier this year. The Sparky's green chile cheeseburger was good, but I do wish they had options to choose hotter chiles, it seems tailored for the tourist crowd. And Blake's, despite being "fast food"--has great burgers, with fresh toppings and the Hatch chiles.
My husband and I love going to Hatch every year, too, even though we can find Hatch chile at the grocery store. It's just fun going in person. Where in California do you live?
Marcy, this was a wonderful video where you captured our New Mexico food heritage. Love the areas that you captured and the food looked absolutely wonderful. During my travels to Catania, Italy, I ended up in at a Mexican Restaurant with pictures and chile from the Hatch and Las Cruces area. Who would have known that even Italians love our chile.
I love hatch chiles and just roasted some yesterday because I found them in my local market. Roasted some Pueblo chilies too. I can't go more than a few weeks without using chilies in some dish. I like both red and green.

The store is still there, but it's now called "Eagle Grocery." In fact, you'll see it in this video. It's still the only store in town. When I was growing up, it belonged to the Bellman & Levenson families. It sold to Eagle Grocery many years ago, but I will forever call it "Bellman's." As a native New Mexican and chile snob from Chimayo, I’d argue that it beats Hatch hands down. More flavorful and has just the right heat. Just hard to come by.
I think the best chili comes from Arrey and the best alfalfa from Derry. Back when I lived near Organ we used to get a lot of chili (and lots of other vegetables) from the dump near the Mesilla dam. Back then the companies would dump items that failed their cosmetic tests (too big, too small, didn't 'look' right) in huge piles. We'd go and get whatever we wanted. In the spring you could also pick wild asparagus right by the river too. We'd also get a lot of chili from the farm workers we knew. I still remember those days when the Mesilla Valley used to smell like roasting green chili..... We used to make enchiladas from tortillas and oil from Mexico (they were heavily subsidized there at that time) and 'government' cheese and butter, along with Mesilla Dam chilies and onions. Not a lot better than a stack of those with an egg on top....topped off with beer from Mexico we used to buy there for 5-6 dollars a case.

Arrey does have really good chile - And Garfield ... I consider all that area Mesilla Valley to a large extent. It's all fed by the same water, same weather, same soil. When I was a poor student at NMSU, we'd take the back road from Cruces to Radium Springs and stop at the farms to get the onions, tomatoes, squash and whatever the farmers weren't going to use for market. We could also do the pick-your-own chile from the field - usually Garcia's fields - for very little cost filling our grocery bags.

We used to go to the damn, where trucks would dump vegetables that didn't make the cosmetic cut. We got bags of onions, rutabagas, chilies.... Oil and tortillas from Juarez..... Thank you Ms. Marcy. Can you believe I never knew what all the fuss was about Hatch Chile? Used to see them roasting it at Central Market. I must say I did try adding them in some of my meals and sure enough, Delicioso☺. Now I wanna travel to New Mexico and appreciate all its beauty!
I live in Santa Fe, but love to go down south to Las Cruces and the Hatch Valley. One of my favorite places to eat has always been La Posta in La Mesilla. Unfortunately their quality has gone down drastically recently. The last two times I visited, the service and quality of food was subpar. Many restaurants have problems these days with being short-staffed and one needs to make allowances for that. However the last two times I had green chile at La Posta were very disappointing. I ordered hot green chile both times and there was no heat or flavor in the green chile. It may as well have been made from bell peppers. Locals said that they stopped going there and it was mostly visited by tourists now. It's still fun to see the place, but sadly don't expect excellent food there anymore.
That's disappointing to hear. Covid changed things for a lot of businesses. Next time you're in town, try Nopalitos. It's another one of my favorites. BTW, I'd love recommendations for the next time I'm in Santa Fe.
There are quite a few that won't disappoint. Try Tomasita's, Tia Sofia's, La Choza or either location of the Plaza Cafe (one of which is located, surprisingly, on the plaza. @@marcyinspired1442
I LOVE Napalitos on Espina, I believe. I don't notice the name of the road. My car just knows where it is. I first went there in 1976 when the place still looked like a church inside - altar area and all!. The food was inexpensive and amazing! I still eat there when in L.C. and order tostada compuestas - red. The BEST!
For me, my fave will always be green! Now, I like red too, but my heart-and mouth- will always love green best. While I may be a gringita, I am a chile snob too, and know my way around a NM kitchen.😛😝😂

Born and raised in New Mexico, NMSU grad, work transferred me to the south east, I miss going to the Hatch Chile festival every year! Whenever a local grocery store gets fresh Hatch chile I buy about 200 pounds of it and roast it at home (they have no clue on how to roast it properly here) because I never know when it will be available again. I just found your channel a couple of days ago, already subbed, love your videos and makes me miss home more and more with each one that I watch. Keep it up!

@@marcyinspired1442 AWESOME!! My husband & I went to Hatch for Labor Day Weekend. He already know that he needs to clean his grill so I can roast the Hatch Chiles,Lol!! I made some Green chicken enchiladas with Hatch Chile. I mixed it with medium & hot Hatch Chile, garlic & onion powder & fresh as well 🧅 & 🧄 cilantro 🌿 & a teaspoon of salt & cumin. Some Tomatillos about 6 of them, sour cream & cream of chicken. Blend all together, that’s how my mother would make her sauce for green chicken enchiladas. Much Love From El Paso,Tx

I also grew up in NM and am also a chile snob, I run my chile through my meat grinder and pack in into 4 oz containers with lids. It works out perfect for my husband & I, this year I did two bushels and got 104 containers of chile. When I need it, it is already chopped and ready to use.

I grow hatch chile here in the high dessert of Reno Nv. We have sandy soil that drains well and the Hatch chile grows well once you get it started and going. I first tried Hatch chile in Riverton Wy, my inlaws are from New Mexico and they moved to Wyoming when they were young. I have been hooked ever since. Green is my color of choice and mild is perfect, a little heat and lots of flavor.

I live in between the Hatch Valley in New Mexico and the Mission Valley in West Texas. Before Hatch got all snobby, they used to have the Hatch vs San Elizario chile war. Now just called "the red and green chile war" the Indio in West Texas take growing peppers seriously.
Just spent the weekend in Santa Fe and picked up a couple ristas at Sprouts (1/3 of the price at the plaza) so I was here learning about them. As Arizonans, we are already in love with Hatch chiles and grateful they're brought to our community every year.
I love that Sprouts in Santa Fe would carry ristras. I want to get a couple of wreath ones for Christmas.
I grew up around there too, your video is great and really makes me want to visit again. My mom knew the owner of La Posta and she would join us at the table during our dinner sometimes. I was enchanted by all the parrots in the entry atrium as a kid in the '70's. Glad i found your channel

I can totally relate. I lived in Sacramento for many years and my house was the only one with a ristra hanging out front. I once put up luminarias at Christmastime, and my neighbors weren't sure what to think. Lol Thanks for the comment.
Friends used to think I was nuts to make the run from Tucson to Hatch for bags of green chiles and Sparky's. They would tell me when in season, one can get the canvas bags of Hatch green chilies here in Tucson and have them roasted out front at grocery store.... And they're right. Same Hatch green chilies, same style of roasters.... And I tell them... yep I could do that. But... It's a great road trip, nothing beats fresh from the field produce... And then you have Sparky's! I do love Tucson, however, Tucson does not have Sparky's! (Although we do now have Blakes. Blake's green chile cheeseburger is really really good, highly recommended, although Sparky's is better). And, the drive back. The smell of freshly roasted green chilies filling the car, it's a little piece of heaven.
Oh my goodness! I feel like I know you! That's my philosophy. I can, of course, buy chile at the grocery store, but it's so much fun going in person for the full experience...and then grabbing a green chile cheeseburger at Sparky's afterwards. Didn't know Tuscon has a Blakes. One more reason to love Tucson, though I haven't been in quite a while. For so many years there was constant freeway construction, so I started driving through Globe instead of staying on I-10. May have to change that now. Thanks for the comment.

Aww, your parents are so beautiful! I'd be a chili snob too if I grew up there. Whenever I watch your videos about the southwest I get homesick. I left California 30 years ago and never looked back. I don't miss the problems, but I miss the dry weather, the mountains, and mostly the really unequaled southwest Mexican food I grew up with. All the very best to you!

I grow them in my Arkansas garden, and even though they aren't "quite" the same, there is nothing better than real Hatch Chile. My favorite is green, but I love red, too. Green for breakfast and red for dinner. But my vote is for green chile recipes, to help you use them all before the next harvest. I don't like to run out but I probably will this year. I bought the hot ones this time and they have really upped my kitchen game. Thankfully they bring them and the roasters here to Dallas every year, because that's a serious road trip for groceries. Since about 2000 ALL the Central Market grocery stores (high end HEBs) in Texas have a "Hatch Chile Festival" every year and trust me, they have gone WAY overboard with it. They manage to put the green chilies in EVERYTHING. They import a number of 18 wheelers bringing the chiles and all roast on site BUT very few of them actually have guys that KNOW how to roast them. As you know its an ART to blast the flames for the right amount of time to make the chilies pliable and able to peel but not torched to death. I still drive 600 miles to Lujan farms most years because the roasting here in Austin is so inconsistent. We are even looking to move to Las Cruces!

I grew up in Grants, NM in the '60's. I knew about Lotaburger before I ever heard of McDonalds or other chains.
Thankfully, since I live in Tucson now, Lotaburger has expanded to three places here.

Would love Hatch New Mexico and Sparky's. Now, I know you are from New Mexico. It is great to keep your tradition of New Mexico no matter where you live. Some families freeze their Chile's unpeeled. I have tried to peel them before I have froze them before and it took me forever. You gave me the idea of putting ice on them. I will try to get the ice put on them when I get them home and they are freshly roasted. Thank you for that idea. To answer your question come up both, red and green. I guess you call it Christmas.

It really depends on how I'm feeling.
At home in California, i most eat green chile from my frozen stash. 😃 When visiting back home in NM, I eat red EVERY day!!! 😋
After my dad retired from the Air Force in 1967, he and my mom decided to retire to New Mexico--without ever having been there. We moved to Santa Fe, and I loved the culture and food immediately. At that time Hatch chiles were basically unknown anywhere outside of the state itself, now they are world famous and sought after. I live in Arizona, but I make it over to visit my beloved New Mexico several times a year, and when it's Hatch harvest season, I stock up. By the way, I visited Hatch itself for the first time earlier this year. The Sparky's green chile cheeseburger was good, but I do wish they had options to choose hotter chiles, it seems tailored for the tourist crowd. And Blake's, despite being "fast food"--has great burgers, with fresh toppings and the Hatch chiles.
I love Hatch Chile and have traveled from California to Hatch To Buy My Chile❤❤
My husband and I love going to Hatch every year, too, even though we can find Hatch chile at the grocery store. It's just fun going in person. Where in California do you live?
Marcy, this was a wonderful video where you captured our New Mexico food heritage. Love the areas that you captured and the food looked absolutely wonderful. During my travels to Catania, Italy, I ended up in at a Mexican Restaurant with pictures and chile from the Hatch and Las Cruces area. Who would have known that even Italians love our chile.
I love hatch chiles and just roasted some yesterday because I found them in my local market.
Roasted some Pueblo chilies too.
I can't go more than a few weeks without using chilies in some dish.

I'm very pleased with myself that I found your channel. Memories of my mother and the summers I spent with my grandparents in La Mesa. I have a question for you that no one has been able to answer-what happened to Bellman's Mercantile that was the only general store in La Mesa? Great recipes !
The store is still there, but it's now called "Eagle Grocery." In fact, you'll see it in this video. It's still the only store in town. When I was growing up, it belonged to the Bellman & Levenson families. It sold to Eagle Grocery many years ago, but I will forever call it "Bellman's." I'm so happy we share that same fond memory, and I'm thrilled you found and subscribed to my channel. Welcome!

As a native New Mexican and chile snob from Chimayo, I’d argue that it beats Hatch hands down. More flavorful and has just the right heat. Just hard to come by.
I think the best chili comes from Arrey and the best alfalfa from Derry. Back when I lived near Organ we used to get a lot of chili (and lots of other vegetables) from the dump near the Mesilla dam. Back then the companies would dump items that failed their cosmetic tests (too big, too small, didn't 'look' right) in huge piles. We'd go and get whatever we wanted. In the spring you could also pick wild asparagus right by the river too. We'd also get a lot of chili from the farm workers we knew. I still remember those days when the Mesilla Valley used to smell like roasting green chili..... We used to make enchiladas from tortillas and oil from Mexico (they were heavily subsidized there at that time) and 'government' cheese and butter, along with Mesilla Dam chilies and onions. Not a lot better than a stack of those with an egg on top....topped off with beer from Mexico we used to buy there for 5-6 dollars a case.

Arrey does have really good chile - And Garfield ... I consider all that area Mesilla Valley to a large extent. It's all fed by the same water, same weather, same soil. When I was a poor student at NMSU, we'd take the back road from Cruces to Radium Springs and stop at the farms to get the onions, tomatoes, squash and whatever the farmers weren't going to use for market. We could also do the pick-your-own chile from the field - usually Garcia's fields - for very little cost filling our grocery bags.
"Arrey does have really good chile", now there's a comment only someone who's lived there could utter! Best chile in the valley! Best alfalfa too. We used to go to the damn, where trucks would dump vegetables that didn't make the cosmetic cut. We got bags of onions, rutabagas, chilies.... Oil and tortillas from Juarez..... I live in Santa Fe, but love to go down south to Las Cruces and the Hatch Valley. One of my favorite places to eat has always been La Posta in La Mesilla. Unfortunately their quality has gone down drastically recently. The last two times I visited, the service and quality of food was subpar. Many restaurants have problems these days with being short-staffed and one needs to make allowances for that. However the last two times I had green chile at La Posta were very disappointing. I ordered hot green chile both times and there was no heat or flavor in the green chile. It may as well have been made from bell peppers. Locals said that they stopped going there and it was mostly visited by tourists now. It's still fun to see the place, but sadly don't expect excellent food there anymore.
That's disappointing to hear. Covid changed things for a lot of businesses. Next time you're in town, try Nopalitos. It's another one of my favorites. BTW, I'd love recommendations for the next time I'm in Santa Fe.
Next time drive south east of El Paso and get your Chile from San Elizario in the Mission Valley. The Indios in west Texas grow them better.
There are quite a few that won't disappoint. Try Tomasita's, Tia Sofia's, La Choza or either location of the Plaza Cafe (one of which is located, surprisingly, on the plaza.

I LOVE Napalitos on Espina, I believe. I don't notice the name of the road. My car just knows where it is. I first went there in 1976 when the place still looked like a church inside - altar area and all!. The food was inexpensive and amazing! I still eat there when in L.C. and order tostada compuestas - red. The BEST!
