Violet Syrup with Sweet Wild Violets

Foraged some wild violets from my mother-in-laws garden, and I’m excited to try making Violet Syrup!
Her lawn is not treated, so I knew these would be safe to pick. My daughter and I had so much fun picking them. 🥰
First step is to steep these in water for 24 hours! Here’s the full recipe below:
2 cups of wild violets
4 cups of almost boiling water
2 cups white sugar
Lemon
Pick violets and remove stems and leaves.
Fill a glass container with 2 cups of flowers. Bring water to an almost boil. Pour water over flowers and mix.
Cover the jar and allow to steep for 24 hours.
Strain the liquid through a fine strainer into a pot.
Discard flowers.
Add 2 cups of sugar to the pot and heat until the sugar has just dissolved. Remove from heat and pour into a clean jar.
Add lemon juice one drop at a time until the blue liquid becomes purple.

I use it to make lemonade! I have another video showing this process. You use the syrup and add lemon juice and water. The syrup became bright pink as it reacts with the citrus! Such a fun drink and science experiment! 😍
