Whenever I drove to or from my college town, I had to stop at a truck stop at the middle of the route. It was called "Dixie's", and they had the most wonderful food. The biscuits and gravy was 2 or 4 biscuits the size of your fist, flaky instead of crumbly, and a soup bowl full of thick and rich sausage gravy. Utterly delicious. I opted to get the two biscuit order with a couple of scrambled eggs, and some hash browns. Broasted chicken is indeed better. Theoretically, KFC started with broasting, but it's easy to cheap out on it by cooking the chicken TOO fast. It's cooked completely, but it isn't nearly as crisp and juicy.

Southern comfort food (I recommend the chicken fried steak) and servers wandering around constantly offering side dishes that are simply included.
Fried in a pressure cooker is how many fried chicken company works to this day. That is how Colonel Sanders started KFC by traveling and showing that technique

I've been in that square in Ocala many many times. Some really good places to eat right around the square and then just north in Gainsville there are several good Asian restaurants... awesome korean place, a really good Thai fusion joint... you should visit again.
I've been to Miller's Bread Basket in Blackville, SC and Yoder's Deitsch Haus (Mennonite) in Montezuma, GA. Both have wonderful food and fantastic breads, cakes and pies.

OMG I miss real food.. lol I grew up in Amish country..those "potato wedges" are called Jo-Jos or broasted potatoes. That's their normal size and they are best dipped in sour cream. I haven't had them since 2014 :( fried mush I haven't had since I was kid and I've been unable to properly replicate that either.
If you ever get the chance to possibly go to Louisiana. There is an all you can eat sushi place. Called Sushi Masa. I'd gladly pay for you to try it out. I think you'd enjoy it.
