One Pot Rice Dishes | Struggle Meals

  • RICE! It not only spans across all 3 meals, but is universally loved across the world! One pot & a handful of ingredients is all you need for each of these 3 winning dishes.
    Coconut Rice Pudding:
    Ingredients
    • 1 cup whole milk
    • 1 can Full fat coconut milk
    • 1/2 teaspoon ground nutmeg
    • 4 packets (2 tablespoons) unsalted butter
    • 3/4 cup short grain white rice
    • 8 (1/4 cup) sugar packets
    • 1 teaspoon vanilla extract
    • ½ teaspoon sea salt
    • 1 mango, finely chopped
    • 1/4 teaspoon salt
    • 1/4 teaspoon cinnamon
    • pinch cayenne
    Steps
    1. Whisk together coconut milk and whole milk and nutmeg.
    2. In a sauce pan, melt butter add rice and sauté for 2 to 3 minutes, on low heat, make sure not to brown the rice. Pour in milk mixture and stir. Cover and cook until most liquid is absorbed, about 20 minutes.
    3. Stir in sugar, vanilla and salt. Remove from heat. Pour into bowl. Let cool slightly. Can eat warm or top with plastic wrap. Refrigerate.
    4. In a small bowl, add mango, salt, cinnamon and cayenne. Remove plastic wrap from rice and top with fruit. Serve.
    Sofrito Chicken & Rice:
    Ingredients
    • 2 tablespoons vegetable oil
    • 4 drumsticks
    • 4 chicken thighs, skin on
    • 1 tablespoon chili powder
    • 2 teaspoons kosher salt, divided
    • 1 ½ teaspoon ground black pepper, divided
    • 1 large onion, small dice
    • 3 garlic cloves, minced
    • 1 jalapeño, seeded and minced
    • 1 red bell pepper, small dice
    • 1-28oz can diced tomatoes
    • 2 cups chicken stock
    • 1 cup long-grain white rice
    • 1 cup green olives, pitted
    • Juice of 1 lemon
    Steps
    1. Preheat the oven to 375°.
    2. In a large cast iron skillet, on medium high heat, add vegetable oil. Sprinkle chicken with chili powder, 1 teaspoon salt and 1 teaspoon pepper Add the chicken to the skillet. Brown chicken, about 4 minutes per side. Remove to a plate.
    3. Add the onion, garlic, jalapeño, and bell pepper to the skillet and sauté until the onion is soft, about 8 minutes. Add the tomatoes with all the juice. Saute until tomato starts breaking down, stirring frequently.
    4. Add the chicken stock and bring to a boil. Stir in the rice, 1 teaspoon of salt and ½ teaspoon black pepper. Turn heat down and bring to a simmer.
    5. Arrange the chicken pieces on the rice, skin side up. Toss in olives. Simmer for 25- 30 minutes until the chicken is just cooked through and the rice is tender and has absorbed the stock.
    6. Preheat the broiler. Place skillet under broil to crisp chicken skin. Remove from broiler and squeeze lemon juice over entire dish. 7. Fluff rice with fork. Serve.
    Struggle Paella:
    Ingredients
    • 1 tablespoon extra virgin olive oil
    • 8 ounces smoked sausage
    • 1 large onion, small chopped
    • 1 red bell pepper, small chopped
    • 2 garlic cloves, minced
    • 1 1/2 cups medium grain rice
    • 2 cups seafood stock
    • 1 cup water
    • 1-15 oz can diced tomatoes
    • 1 pound frozen calamari rings
    • 1 1/2 teaspoon sea salt
    • 1/2 teaspoon black pepper
    • 1 teaspoon turmeric
    • 1 cup frozen peas
    • 2 tablespoons chopped parsley
    Steps
    1. In a cast iron, on medium high heat, add oil. When hot, sauté chorizo until brown on both sides, about 2 to 3 minutes. Remove and set aside.
    2. Add onion, pepper, and garlic and sauté for 4 to 5 minutes.
    3. Add rice and stir to toast, about 3 minutes. Stir in seafood stock, water, diced tomatoes, with all juices, salt, pepper, and turmeric. Stir until combined. Bring to a boil. Top with calamari rings. Cover with foil and let simmer, until all liquid is absorbed. 4. Remove foil. Top with peas. Stir and sprinkle with parsley.

    I made your struggle paella and it was great! I had to make a couple of substitutions to fit into my own struggle though. I used shrimp (on sale) and chicken stock.

    There's a Lebanese recipe called Mujadara which would fit perfectly in this video. It has rice, lentils and caramelized onions. I'm from Mexico so I don't know too much about it but my family eats it with yogurt and cucumber and it's so good!
    Anyways, great video. I died a little when he dropped the beat lol. Loved that part :P

      Yeah my mom makes that too. Except we don't put cucumber in the yogurt. Apparently it's common for Christians to eat during lent because in some churches in the middle east you go vegan for lent.

      It's not called mujadara it's called Majadara, and it's amazing.
      The thing is that with a lot of lentils you need to soak them in water for a few hours to a day before you cook and that can be kind of annoying to people.

      @@moonshiro The spelling of the dish depends on the translator and perhaps even the country as different Middle Eastern countries have their own native spelling and versions. Like Natalia, I've seen it spelled primarily as "mujadara". In contrast, Ottolenghi spells it "mejadra". Regardless, it's a delicious dish.

      When I cook it, I use brown/ green lentils which don't require or only require a short soaking time (like an hour). The lentils are small enough that cooking 15-20 minutes in water is enough: overdo it and it becomes mushy. Check out the recipes online.

    Husband and I made the chicken and rice today and it was delicious! Thanks for the recipe! We added some mushrooms and omitted the olives. The rice had amazing flavor. We would definitely make this again!

    A struggle alternative for vanilla extract is pure vanillin. It is the main aromatic of vanilla, it is sold in quite potent powder/crystal form, and at least where I live is very much cheaper than an equivalent quantity of vanilla pods or extract (about 1 spoonful of vanillin equates to 4 of extract).
    In a gourmet sense it is not exactly the same with actual vanilla because that contains other secondary aromatics too, but it's quite good enough (almost everything vanilla-flavored or scented that you buy contains only vanillin, including those artificial vanilla flavoring vials), and you do get good savings.
    Extra savings if you can buy it by the gram in a spice shop instead of pre-packaged.

    Once I found out how toxic Teflon is, I threw away all of my Teflon coated cookware and bought a good old-fashioned cast iron skillet...I educated myself on how to care for it, and I use it all the time. I love this guy...using his cast iron skillet...yaaaaay.

    I had Sofrito for the last time last month bc I was staying my my boyfriend's house and he Puerto Rican. So good. The only thing he does different is the onions, peppers and all that stuff with the season he puts it all in a blender then mixes it with the rice and any other meat

    Part II - i had leftovers of the chicken and rice, so I turned the chicken n rice into soup. I shredded the chicken and added to some homemade stock. Put about three or four huge spoonfuls of the rice mixture in and some spice, sambal. All it needed was to be heated through and voila a struggle meal lunch with all the flavor of the original

      It's extremely quick and simple.
      Turns out, Japanese people have a dish like that!

    A little tip: if u live near a morrocan, iranian or other middle eastern food shop, u can get buillon cubes with saffron that are really cheap. Ideal is a brand u get in the uk for around £ 3-4.

    Ok Frankie, I am loving your show. Right from the beginning I knew I liked your style and charisma. I have seen quite a few of your videos and am subscribed. Well today, I started my day by making the prosciutto and cheddar biscuits with cheese. Delicious. I have breakfast for the rest of the week.     Nothing beats struggle meal than nasi goreng - fried rice. You can add anything. Pulled chicken to reduce cost by buying less parts of the chicken, soy sauce, beef or chicken stock. Maybe add an egg. Boom. You are done. That is cost effective

      Actually, alternative grains / gluten-free grain meals would be nice. Quinoa, Couscous, Buckwheat, Chickpeas, etc.

    Fried rice should be a great and cost effective. Especially southeast asian varieties, which can be made with any left over meats or vegetables.

      He put it back into the pan to cook for another half hour. The heat would have taken care of any pathogens.

    Fun Fact: Jambalaya is the original Struggle Paella. It was an attempt by Spanish immigrants to recreate Paella without having Saffron.

    Sazon con achote packets are even cheaper than turmeric and will dye the rice yellow and give it a slight flavor. Try it 😊

    Paella - the best food in the world. I don't like tumeric though, tastes muddy to me. Smoked paprika - I have a tin in my cupboard and sometimes I just open the tin and take a deep whiff - I'm hooked on the smell.

    Frankie, frankie frankie tut tut tut. Turmeric is no substitute for safron. Safron flavour is the most gorgeous thing on earth. No substitute, trust me I've searched n searched.

    This past covid season I've learned cleaning and washing rice is important. Is the rice being washed or is it raw and starchy??
