Ingredients:
3 Lbs Ground Beef
1 LB 12 OZ San Marzano Peeled Tomatoes
8 OZ Tomato Paste
26.5 OZ of Chopped Italian Tomatoes
10 Oz Yuengling Lager
2 Jalapeno Peppers
1 Green Pepper
1 Can of Red Kidney Beans
1 Can of Black Beans
Juice of ½ Lime
Hot Sauce to Taste
5 Cloves of Garlic
2 Small Yellow Onion
1 Shallot
1 Bay Leaf
1 TBS Pluck Spicy Seasoning
2-3 TSP Red Pepper
Salt and Pepper to Taste
1-2 TBS Chilli Powder
1-2 TBS Cuimin
2-3 TSP Dried Oregano
1 TBS Fresh Cilantro
2-3 TSP Garlic Powder
2-3 TSP Onion Powder

Why wouldn’t you toast the tomato paste? That usually takes the bitterness out of it and adds better flavor.
First off it is Chili with Beans. Chili is beef and chilies period. No tomatoes, beans or other additions. It is the State Dish of Texas.

The ICS calls it "homestyle" chili. As long as it tastes good, nobody cares what you call it. It's just food--chill. I won three local chili cook-offs in the last year here in Arizona using beans and tomatoes. Beans have been used in chili since the 1800s, even before cumin, but it's true that tomatoes are a much later addition. Check out Tasting History's video on it.
