For bottom of cake, the level side of cake goes up and the lumpy side goes down on the plate. Then you frost it. When you add the second layer do the opposite...the level side now goes over the level frosted layer so the two layers are straight and flat where they meet. This prevents cake from sliding and keeps the frosting in the middle the same thickness all around. There are no uneven portions of frosting in the middle. When you cut it, it looks professional and won't be a lopsided cake.
You could sift the dry ingredients and you won't have lumps in your cake. Also a lighter airier cake. Also, I would cut a thin slice off the bottom layer so that your top layer will rest w/o sliding off the bottom layer.
Thanks for all of the creative healthy ideas. I made this cake this weekend. It is a great healthier alternative to regular cake, but the frosting/mousse really helps. The kale flavor can be strong for people who aren’t used to a plant centered diet. I think next time I’d cut the layers in half and add the mousse between each layer to break it up.

I made a half recipe of Kale Cake with oat flour (whizzed from my blender), and found the cake to be nice and satisfying. There were no berries in the fridge, but lots of fresh lemons, so I used the lemon juice/silken tofu recipe -- full recipe of the frosting -- and it is such a delicate flavor in a good consistency for frosting or pudding. This recipe is wonderful. I am thinking of adapting it to something like a hamburger bun. Thanks, ladies! I always enjoy your videos.

Ooh ooh! ~ we could do a triple layer cake then! How unexpectedly Christmassy & festive would it be, when u cut a slice & it reveals vivid red & green secret layers inside! a kale green cake layer, topped with a beet red layer, then a green layer again on top! & make that amazing Dr Seuss bright purple frosting to top it off then maybe cover it in sprigs of holly! Can u eat holly? (i wouldnt know, im an Aussie & have only seen holly & mistletoe on Xmas cards & American TV movies!) But if u cant eat holly, i reckon we could try making some using cherries & raspberries with baby spinach leaves! & add the 2 blue berry rings around the cake base & outer ring on the top layer like Jane & Ann did! Oh Lordy im getting excited here...i can picture it already! Purple is my favourite colour but i think i want to add some accents in that lovely storybook pink frosting too! like maybe use a piping bag and do a fat bright pink star rosette in between each of the blueberries in those rings at the base and on the top! Oh this is gonna be fun! (& i dont even celebrate xmas! lol) Gonna get started tomorrow shopping for kale and berries and tofu & try a practice run or 2!

A friend’s birthday is coming up in April! I’ve been wanting to try this & then here you were 💚 She is trying to be more plant-based. Since she loves chocolate, I’ll try the raspberry icing on a vegan chocolate cake with fresh raspberries. I might make the kale cake for the residents at work...they would not eat kale in a bale, they would not eat kale with a tail But if you bake it in a cake, they’ll say “oh, Britt, for goodness sake!” Ooo! What about a lemon icing? ANNyone? 😉
