Car is coming along! Looking really good. One thing I noticed with mechanical temp gauge when I swapped my 1970 f250 over to electrical gauge is it ran cooler. I believe the under the hood temp can slightly raise the reading on the mechanical gauge(5/10 degrees). Should run cooler once you get the electrical gauge figured out.
The Xr4TI was the only car that kicked my butt. Bought a used one out of high school and that dang thing was always in the shop. Sold it. 30 years later, what a great car to rebuild. Ill get another one now that I have tinkered with cars. Hell, ive managed to own a bunch of Range Rovers without breaking the bank. Great project and videos!
Putting the sensor in that location measures the temp of the water coming out of the t-stat when it opens. You may want to relocate it to the lower intake where it gets constant flow for more accurate readings.

Looking good. Did you consider making the vertical air blockers at an angle, so they are the full width of the opening in the bumper at the front, and then narrow down to the width of the rad, so they scoop up more air and force it through the rad?

Merkur projects are the best all i had was a volvo intercooler with a saab radiator and t5 transmission anyways there not trucks with independent suspension you know how people like to advance in like . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . .. ..
Having a thick radiator core can cause hot running at slow speeds, your radiator does look like it has a fairly coarse pitch on the foil so maybe will be ok.
230 is way too hot it seems to me. 190 is a good normal temp. Also make sure you still don’t have air pockets in the cooling system. With the rad replacement and the top hose and fill neck so low in the vehicle I wonder if it truly burped out all trapped air in the system.
Nathan's Garage yeah. I like to stay around 190F give or take a bit. Once temp goes over 200F, they don’t seem to like it much. At least, most engines don’t.

I went through the same drama with my bug conversion.
For peace of mind I bought a fluke infrared thermometer to confirm the gauge was accurate.

Why let it run that hot? 180 thermo and 180 fan switch should be good. If it gets hotter than 180 then, then you know you have other issues.
