I love this channel and most of the things prepared here, but this is a miss for me. I am biased caused I come from Italy, but that's not the point. These dishes were made to look good, but they are what we call a "mappazzone"....to much of everything, overcooked protein, runny sauce,...

@@thisiskevin1000 nah, I don't think so. Your premise basically says that food is completely subjective, and for a good part, it is not. As any artform, there are rules, and the subversion of these only makes sense in rare cases, usually as provocation.
Smooth long pasta catches the sauces only if it's viscous enough.
Sea food either is cooked for short time to preserve crunchiness and freshness or slow cooked to dissolve collagen and have them tender. You don't cook it in an awkward middle because you will be far away from both optimums.
