My husband and I made some jerky according to Wingman's recipe. We went to a local meat market and got the bottom round roast, they sliced it up(although their slicer didn't have a four, they guesstimated what we wanted) and our jerky only took about 5 hrs to cook. The first batch we did cook longer but we felt it was too dry( we have a nesco dehydrator). So the way ours was sliced, 5 hrs worked better. It was so good! Delicious! We will always make our own jerky from now on, using this recipe that Wingman teaches. Thanks so much for sharing it, Wingman!

thank you for the video, I followed it and was a hit at work. My 2nd made a batch that I subsituted teriyaki sauce instead of soy and it turned out awesome. Then for those who like spicy- I did 2 cups soy sauce, 1 cup brown sugar, 1/2 bottle of liquid smoke, and 1/2 a cup of sriracha sauce, let it marniate over night- was to spicy for me but I am a wimp when it comes to spicy but everybody else liked it..thanks again.

Very cool. Ive been making deer jerky with the meat already grounded and I use a beef caulker, and make my strips and then use my $50 dryer for 6 hours.
Thank you for the recipe,if you want to go on the cheap for brown-sugar molasses and granulated sugar with a blender or food processor,if you like dark brown sugar just add more molasses. Look it up.its better than store bought.

Very nice. I have made jerky from scratch using eye of round roast and that has turned out pretty tasty. After dehydrating, I put the jerky in a smoker oven for a few minutes to pick up a nice smoky taste. Hope you'll take a look sometime. Your video makes jerky look very easy to do. got the jerky made...i couldnt stop taking pieces out to eat while it was drying. Simple, basic recipe that has good flavor. i did marinate longer than two hours as well. taste is very good and i think i will use this often. i am a meat cutter by trade, so pretty easy to get the meat....thanks again
Awesome vid! I live in the uk and have been making it for about 4 months. You're absolutely right. As soon as people find out you're making it, they all want it! That's why I'm looking into starting my own jerky company here. Cos it's not massive over here and costs like £1 for 50grams!!! I've done about 7 different flavours so far and they've all had great reviews :-D

I had a friend while o the ship, his mom use to make a hug gallon type zip lock bag full of deer jerky and it was good, it surprised me how good it was. It usually takes a week to 2 weeks for mail to come to ship, when we was out to sea, but it was always a treat when he would share some of his deer jerky with some of us. nice vid, thanks
Great vid and very nice recipe. Tried it with salmon, only difference is I added 3/4 cup dark molasses to my brine/marinade and 1/2 bottle of liquid smoke. Turned out awesome. Thanks for sharing Wingman. p.s. I have always been told never use metal or stainless bowls for marinading or brines, only glass or plastic, something to do with the salts in the marinades/brines that leach or cause a corrosion which can taint the meats.
+Wingman115 Also, Mr. Wingman, what about using a marinade using bourbon? I bought a generic dehydrator at a Salvation Army ($1.00) to start with and it works great, although I'll upgrade later. Also- any thoughts on fish? Once again, great tutorial!!
If you can find it try the mesquite liquid smoke, and just to mix it up sometimes swap the brown suar for bar-b-que sauce. DEFINITELY try mesquite smoke.
Great video! I have been making jerkey for years, Our recipes are very similar and I can't seem to keep any around for more than two or three days. The kids devour it! I have to bag separate, individual bags for everyone or war breaks out. I just wanted to say that I'm glad to see that you don't use Worcestershire sauce in your recipe, I think the end result is MUCH tastier without it.
Great video Wingman... I make mine very similar to yours but use Kikkoman Teriaki instead of the homemade marinade, i just buy the huge bottle at Sam's Club and then dry it in my electric Masterbuilt Pro smoker. I have 5lbs of bottom round marinating right now. :)

My dehydrator has a fan that forces air threw the unit. As far as how dry do you want the meat that's up to the person making it. I do mine completely dry.
Making my second batch just the way you did it tonight. the flavor is great and everyone liked it. I might make this batch with some red pepper flakes plus it's just the right about of sweetness. Thanks Wingman115

I agree about cross grain cutting of the meat. Couple things I noticed #1 freezing beef jerky changes the flavor, I don't know why specifically but I'll never do it again. #2 I have the same nesco and 8 hrs seems to be max. #3 I have 8 racks on nesco, but what I have noticed is the top gets hotter, so I remove the top two racks at 7 hrs and remove others every 15 min (OR put the thicker pieces at top). I would recommend a meat slicer, frustration with getting strips same thickness and time!!
@wingman115 Not ground beef, just any type of meat, but as a note, because this dehydrater doesnt get hot enough (and for your vids, I think this is a popular model), I just put it in the oven for a few mins (didnt take long with how thin it is) to basically bring it above 165 degrees to kill any bacteria. At that point i put it in the dehydrate (6 hours was too long since it already baked. I recommend only 3-4 if it was already cooked). Still tasted awesome though!
@wingman115 Just as an update. I did a little research and basically with a lower heat dehydrater like mine, you just need to bake the strips of beef for a few mins, just long enough to raise the temp to kill any bacteria (keep it rare). Then dehydrate the strips. Its worked great. I did it in the oven, but I would like to try it on a baking sheet in the BBQ with real smoke chips to add a little more flavor.
Instead of liquid smoke I use coffee to give me the bitter taste plus it acts as a tenderizing agent.. I also use spicy brown mustard to give it a bit of punch. I also use brown sugar and soy sauce. Nicely done.
I've got the same Nesco. Didn't realize how awesome it was till I used my brothers generic dehydrator a few weeks ago, Those things circulate very unevenly. I've been using himountain and cut with the grain, which keeps me from eating it constantly, as my jaw gets angry. :) Otherwise it just keep eating it till it is gone...
I appreciate you showing how you make beef jerky. I just bought a Presto Dehydro w/4 tray and used a $15 rump roast. I sprayed some pam on the trays and just used Sweet Baby Ray's Honey Teriyaki. I would like to try your recipe if you don't mind.
Brown sugar and black pepper is the best type of jerky IMO. This recipe is very similar to the one i use from the channel "hey grill hey". The main differences is i also add some garlic/onion powder/red pepper flakes and some warchestershire sauce for a bit more flavor. Everyone loves it! P.S. If you want it to last longer you can add some curing salt as well.
Thank you. I'm shopping for a dehydrator and was wondering if a square type was better for this vs round trays. I have looked at your brand vs Excalibur square brand trays. My favorite snack food beside the cost to buy. I'm busy also building food for when SHFT happens.
Pam Z Pam pick the one that you think is going to be best for you and what you want to do.. The Nesco has been pretty good to me. I've made a ton of beef jerky with it and it will take up to 12 trays.. Most times I make up to 5.5 pounds of jerky with the Nesco and the round trays..
never thought of sugar for my marinade - I'll try that next time, I use soy, smoke, Worcestershire sauce and the Canada steak season.. your blend sounds much more economical. good job with the video.

I love your recipe, its so simple and I think that just make it much better. I understand that the jerky you make would be gone in around a week (like mine too :D) but if you plan on keeping it for a while you should use meat with as little fat possible as it goes rancid quickly. Love the video!
I'm at the part where you're setting up the jerky on the trays before drying, and 2 things come to mind: 1. As far as shelf life goes, I'd say you can also store it with some silica gel packets (a few bucks on ebay for a good bunch of them), since it removes moisture and that's really what would make the fat go rancid. 2. For a drip tray in the dehydrator, that Nesco may have come with a fruit rollup tray, perhaps use that on the bottom? Nice video so far tho, well done.

Hey. Thanks for the video. I have been experimenting with different types of food storage. Learned to pressure can, vacuum seal, dehydrate. I spent the least time on dehydrating because it seemed such an art form to know exactly what it should look like when it was completely dehydrated but still edible. I tried different vegetables and sometimes it was right but sometimes not enough and eventually spoiled even though I used the recommended times and heat. Haven't tried meat because it is too expensive too mess up on. If you were to follow this recipe, how exactly are you to know it is dehydrated enough to store without spoiling? 8 hours, 8 1/2 hours? What do you look for?

Drew glad to hear your diving into the beef jerky realm. With your question about the liquid smoke. There are 1000's of ways to make beef jerky this is just the way I do it. After you've made a few batch's you will start tweeking the way you like to prepare and season your jerky. As to the question about patting down the meat. I do it after it has dried. Some folks may do it earlier but I just set the strips in the rack and forget it until it done. Thanks for the comment.
It is much cheaper to make it at home, but you also have to consider the weight difference between the raw and finished product. 5 pounds of finished jerky is ALOT more than 5 pounds of raw meat. Another great benefit is supporting local farmers, butchers, and knowing what's in your food.

Good recipe. I use molasses & honey instead of brown sugar. I also add about a 1/4 cup hot sauce (Tapitio is my favorite for this).
I also do mine in my smoker with hickory, apple, or cherry (sometimes mixing different ones together) wood chips for added flavor.
Hmm...I wonder if you can put soaked wood chips in a dehydrator?

I only let it sit in the marinade for about 2 to 3 hours..

Brown sugar and black pepper is the best type of jerky IMO. This recipe is very similar to the one i use from the channel "hey grill hey". The main differences is i also add some garlic/onion powder/red pepper flakes and some warchestershire sauce for a bit more flavor. Everyone loves it!
P.S. If you want it to last longer you can add some curing salt as well.

Thank you. I'm shopping for a dehydrator and was wondering if a square type was better for this vs round trays. I have looked at your brand vs Excalibur square brand trays. My favorite snack food beside the cost to buy. I'm busy also building food for when SHFT happens.
Pam Z Pam pick the one that you think is going to be best for you and what you want to do.. The Nesco has been pretty good to me. I've made a ton of beef jerky with it and it will take up to 12 trays.. Most times I make up to 5.5 pounds of jerky with the Nesco and the round trays..

never thought of sugar for my marinade - I'll try that next time, I use soy, smoke, Worcestershire sauce and the Canada steak season.. your blend sounds much more economical. good job with the video.

I love your recipe, its so simple and I think that just make it much better. I understand that the jerky you make would be gone in around a week (like mine too :D) but if you plan on keeping it for a while you should use meat with as little fat possible as it goes rancid quickly. Love the video!

I'm at the part where you're setting up the jerky on the trays before drying, and 2 things come to mind:
1. As far as shelf life goes, I'd say you can also store it with some silica gel packets (a few bucks on ebay for a good bunch of them), since it removes moisture and that's really what would make the fat go rancid.
2. For a drip tray in the dehydrator, that Nesco may have come with a fruit rollup tray, perhaps use that on the bottom?

You really don't need a dehydrator, you have an oven. It works just as well, and it's faster.

Hey. Thanks for the video. I have been experimenting with different types of food storage. Learned to pressure can, vacuum seal, dehydrate. I spent the least time on dehydrating because it seemed such an art form to know exactly what it should look like when it was completely dehydrated but still edible. I tried different vegetables and sometimes it was right but sometimes not enough and eventually spoiled even though I used the recommended times and heat. Haven't tried meat because it is too expensive too mess up on. If you were to follow this recipe, how exactly are you to know it is dehydrated enough to store without spoiling? 8 hours, 8 1/2 hours? What do you look for?

Drew glad to hear your diving into the beef jerky realm. With your question about the liquid smoke. There are 1000's of ways to make beef jerky this is just the way I do it. After you've made a few batch's you will start tweeking the way you like to prepare and season your jerky. As to the question about patting down the meat. I do it after it has dried. Some folks may do it earlier but I just set the strips in the rack and forget it until it done. Thanks for the comment.

It is much cheaper to make it at home, but you also have to consider the weight difference between the raw and finished product. 5 pounds of finished jerky is ALOT more than 5 pounds of raw meat. Another great benefit is supporting local farmers, butchers, and knowing what's in your food.
