2 eggplants
1 clove of garlic
10 cherry tomatoes
180 g (6 oz) of cottage cheese
2 eggs
100 g (4 oz) of parmesan cheese
Breadcrumbs to taste
Basil to taste
Salt, pepper
Olive oil

Tried the first recipe a couple of times now and it was delicious. We had them for breakfast but I won't lie we're not vegetarian so each subsequent time we made them we added a meat. Bacon once, diced ham once, and breakfast sausage once. All were a big hit though! Thanks for sharing

Super Delicious most of it i had in hand grown in my garden. Only had to add cottage cheese and 2 eggs. Highly recommend. The eggplant tasted meaty almost like mushroom texture.
