  • New Orleans native Charlie Andrews gives a demonstration on how to make New Orleans most popular dishes. It serves 4 people. Dirty Rice is a Cajun and creole dish that involves cooking rice which gets its dirty color from being cooked with small pieces of chicken liver, gizzards, Onion, celery, and bell pepper. Dirty rice is also known to some northern regions as rice dressing. It is made with ground beef or ground pork. This is a very good dish.       I was thinking the same thing most recipes on TH-cam look more like jambalaya but they seem to think it’s dirty rice.

    Welp! I used half gizzards and half chicken Andouille sausage... The rice was supposed last a few days🙃.. It's already half gone! I believe this is what people call a setup.... Now I'm expected to make this all the time. Thanks a lot chef! Lol🙏

    Charlie you have the original New Orleans dirty rice recipe on TH-cam. Besides one other older New Orleans woman. Everyone else dirty rice recipe is rice dressing, ground beef, or pork sausage. Thanks for keeping the integrity of the original New Orleans recipe. ♥️♥️

    Hey Charlie, I really enjoy your videos. I am a New Orleans native who was displaced after Katrina and now living in Colorado. I've spent a lot of time trying to find people who cook cajun/creole food right. Problem is that a lot of people who know what their doing with cajun food make sloppy videos that are hard to follow. The people that make professional videos have great videos but you can tell they don't know what their doing. You are the perfect combination. I have chef Paul Prudhomme's cookboook and you seem to cook very similar to him, adding vegetables and seasonings at various stages to create layers. Keep doing what you're doing!

    Looks good. I am a New Orleans native as well. Born in New Orleans and raised on the north shore. My family never cooked dirty rice for some reason so I never knew how it was cooked. Now that I know how I will be trying your recipe soon. I have gizzards in the freezer. I fry chicken and when I do I fry up some gizzards also. My husband loves fried chicken gizzards. Sometimes I fry the livers also but usually just the gizzards. You are so neat and clean in your cooking which helps make your dishes so appealing. Love how you are representing our area with your authenic New Orleans homestyle cooking.
    Some cooking chanels are too fancy or the people don't take the time to wash the meat or handle raw meat then pick up the seasonings or wipe their hands on their shirt. Just nasty stuff. You my friend are definetly not nasty. I always wash my meat. Sometimes there are shreds of bone from the cutting of the meat and the raw blood.
    Anyway thanks for another great recipe. Take care of yourself.

    Ok boss, my dad was from NOLA. He came down to Honduras and met my mom, he stayed down here, they both had me Here as well. He showed and taught me everything I know about Cajun food.

    I'm lil over a year late watching this it looks delicious.
    You know this whole time I thought New Orleans dirty rice was made with sausage lol. My grandfather( New Orleans native himself) use to make this.
    I never cared for gizzards( so I thought) you just might convert me. Lol

    Charlie, another awesome presentation regarding “ dirty rice” and the difference between dirty rice and rice dressing. For my taste I agree with your use of gizzards rather than meat and liver as used in the “rice dressing”. The rice dressing you described reminds me of giblet turkey gravy which is very good, but your presentation and lesson on dirty rice is preferred. Thank you Charlie.

    I live about 100 miles give or take a mile or two west of NO, I was taught the opposite dirty rice was with ground effects and dressing is with the gizzard and liver. Like you said I guess it's where you're from in Louisiana. Nonetheless I love your channel. Keep it up its great.

    wow I've been mislead all my life lol. i thought dirty rice was the one with the ground beef in it. even when u but the Tonys or zatarains out the box it says add ground beef. will be trying this one for sure. we love chicken gizzards in my house hehe

      Nahhh alot of people have been mislead. Traditional dirty rice is made with either chicken gizzards or chicken livers. I was under that spell at one point in my life lol I like chicken gizzards too but i don't eat them often! Thanks so much for commenting! :)

    Wow another great video! I have always LOVED New Orleans style food and cooking, but watching your videos is teaching me so much. Who knew authentic dirty rice is made with chicken gizzards?!? I've been using ground beef all this time, but surely this is what I ate in restaurants in New Orleans. Cannot WAIT to try this!     Always learning smthg new from you -?crockpot gizzards 👍. I figured the diff between rice dressing and dirty rice had to be gizzards & liver vs ground beef & sausage. Sometimes I will make the meat mixture then divide it up -half with rice & the other half for cornbread 👍 You a good man Charlie 'brown' Andrew😉

    It's sad but I have an Ex and that's the only thing I miss from her is her dirty rice - She used chicken livers and gizzards so I'll try it and incorporate the Chicken Livers to your recipe which is identical to her's Thanks for sharing and not having me to go back to her.

    I am so glad you explained the difference between real dirty rice and rice dressing because people look at me like I'm crazy when I tell them I put gizzards and liver in mine! I never thought to make chicken stock with the gizzards...thank you and I will do that from now on. I do it with veggies and chicken thighs and breast. As always, I've learned a few new methods from this video. Thank you so much for sharing your gift with us. I ❤️ to cook and have since I could reach the stove!

      Yes i had to. Some people don't know the difference between a traditional dirty rice and the rice dressing lol Yes i made the chicken stock to add more flavor!       Charlie Andrews : Charles you are simply the best! Dude, Houston could use your Creole & Cajun food. The foodi here is not so good. Now, there are a few African Americans who came from New Orleans working in the service industry! The New Orlean's natives are opening up their own establishments. please come to Texas because there is alot of money to be made. We have Asians, Hispanics, White and Middle Eastern people love this well seasoned cuisine! Texas wants you! If you build it and prwpare it, they will come Charles!

    I want to make it for Christmas but I've never used organ meat. I have to make it for like 30 people. So should I just double it. Would it be ok to add beef as well.

      Charlie Andrews Forgot to tell you I made it for Christmas. It was so good. I think it outshined a lot of the other dishes there but we had so much food I had so much left over. I will surely use this recipe from now on as my main one for dirty rice.

    Thanks for the lesson Charlie! All this time I thought I was eating dirty rice (ground beef) and I was eating rice dressing. I like chicken gizzards but not chicken liver. I will attempt this recipe.

    Your ratio of rice to meat/veggie mixture looks a bit heavy on the meat mixture. That may be correct for your region, however I have eaten dirty rice in southern Louisiana many times and I personally would have added 6 cups of cooked rice. Good video.

    QUESTION : Why do you rinse with cold water the cooked rice after it's cooked? Is it to remove more of the starch or to cool it off?

      To be honest I think it is a habit of mines I've been doing since I started cooking rice. I just decided to rinse my rice and leave it as is. I'm guessing that it removes some of the starch but it works for me! I know some people like my grandmother she used to steam her rice in a strainer after she finished cooking it!

      Yes...I've done the same. My father taught me how to cook (not my mother, she is a musicia). I repeat what he did...he learned how to cook from my grandmother (his mother). That's how traditions are created I think.
