    Scoville units are measured per volume, so they're not additive. In other words, throwing all those peppers of differing SHUs (Scoville Heat Units) into the food processor doesn't create a mixture where all the SHUs are added together. Instead, it creates a solution where the hottest pepper's SHU (in this case, the carolina reaper) is diluted in the solution with each less hot pepper added to it. So, you take the average of the SHUs, not the total. The marinade y'all made in the food processor was closer to 823,500 Scovilles. Still hot as hell, but not anywhere close to 10,750,500.

      @@knightofastora1324 I've tried a 6m Scoville burger, you wont notice a difference between 2 and 10, especially if you are that sensitive to heat it is just pain at both heat levels that doesnt increase anymore.

      ​@@xDP02 well, but there is a difference between 10 and 16 million Scoville. Ed (creator and breeder of the spiciest peppers) once tried a pure capsaicin crystall, he said that his face was paralyzed for several hours. But, besides for that, idk about pain, maybe it's the same 🤔

    Several things:
    1. The Scoville Rating for the Carolina Reaper (2.2 million) is just 1 pepper, and has not been replicated officially since. (the Average is ~1.67 million, which is still absurd)
    2. Speaking of scoville raiting, you cannot combine the scoville raiting for all the peppers contained in the dish and have it be accurate. You quickly gain spice tolerance, so in effect, only the hottest pepper can count in your dish.
    2. Best things to cure spice are Dairy (I saw milk, but Yogurt is better) and citrus. The citric acid helps neutralize the oils of the capcaisin.

      Yoghurt is correct but so underrated since people tends to use plain milk, it is my direct way after eating anything spicy
      and Chili/Pepper is more of alkali (citrus part), to have some acid to neutralise alkali is kinda science.

    I am SENT just by the fact these two understand that high spiciness doesn't necessarily equate to high flavor. A lot of super spicy foods only worry about the heat, and end up tasteless as a result. But they managed to put together recipes that actually have a ton of flavor and still work with the heat, which is what spicy food should always amount to.

      That's because with a lot of these hot chili sauces they just added a bunch of capsaicin oil in. Cranking up the heat levels / chemical burn but achieving no flavor. Kind of like the spicy McDonalds chicken sandwich or something like that where you bite into it and it actually has "no added flavor" but you just feel heat on your tongue from the chemicals of capsaicin oil that they put in there. "Stupid and Lame"

      Sometimes food that has a focus on being spicy actually tastes horrible. Tried atomic wings for Wing Stop the other day and they were actually wayyyy spicier that i thought they would be which was a nice surprise how ever they tasted horrible. the sauce tasted almost dirty in a way. it was not good. I would have enjoyed the extreme heat if it was flavorless to be honest and obviously even more if it had good flavor. Never eating atomic again lol

    Although they say its 10m scovilles, things like chemical concentrations (which is what the scoville is measuring essentially) do not stack additively. Adding a jalapeno to a scorpion only serves to dilute and weaken the overall sauce (though it will add some much needed flavor). Same with just about anything else. The true scoville of that final sauce is probably closer to 1 million, maybe less.

      I'm glad someone else mentioned it. I know some people don't realize that capsaicin doesn't stack, but I've seen man channels that just say it does for the views, which is very disappointing.

      I was looking for this comment, thanks. I grow ultra hot peppers so this is definitely something in my wheelhouse and you are 100% correct. If there was a pepper that was 10 million scoville it would be over 60% pure capsaicin. Still that blend is extremely hot can't deny it.

    Scoville doesn't increase as you add different peppers or ingredients to a dish. It averages out in a number somewhere in between the hottest and mildest ingredient in the dish.

    I just want to say thank you for your pursuit of steak knowledge. I thought I knew how to cook one till I started watching your videos. Last night I made the most juicy, flavorful and tender steak I've ever had and it was OVERCOOKED! I can only imagine what it would've been like if it was perfectly cooked like a guga steak.     [I will add that when you blend different types of peppers with different scovil ratings, the ratings do not add up--they go down. So the marinade and the sauce wasn't 10 million scoviles; they would be somewhere between the Reaper and the Poblano; that is, below 2.2 million scoviles]

      Absolutely. And moreover, when you add other ingredients the rating goes down. The scale was designed by measuring how much sugar water was needed to stop chilli extract being tasted, so eating 10 grams of a 100,000 scoville pepper is comparable to eating 1 gram of a 1 million scovile pepper mixed with 9 grams of non-spicy stuff.

    i think it's amazing how they managed to still make insanely spicy stuff FLAVORFUL. That's a feat itself. People are always crazy on making things spicy, but that's it. They just want to kill your tongue and mouth and not care about flavor XD

      Not really. Basically any pepper that's less hot than a Scorpion or Carolina Reaper is going to taste good if you can get over the pain. Habaneros and Scotch Bonnets in particular are famous for fruity goodness.
      The reason why flavor starts sucking after Ghost Peppers is because you're no longer talking about natural peppers and are instead hybridizing different peppers with the goal of concentrating their pepperiness and losing their actual flavor. Obviously it being a natural pepper doesn't mean it'll taste good, but tastier peppers are more likely to get spread by animals so there tends to be a correlation.

    This instantly became one of my favorite episodes by virtue of Guga's EXTREME(ly) funny reaction. Also, shoutouts to the boys for making such nice-looking dishes. Clearly they've leveled up a bit from when they were taking on each other and then a viewer of the show.

    I used to be a huge steak lover that is until I had to have all my teeth pulled (24) due to fractures and since then lost a lot of my taste and steak no longer taste like it once did.
    But I watch you guys enjoy the steak you all make and it makes me smile

    3:46 i don't think it works that way. Scoville units don't stack up cumulatively. Scoville measures capcasin density, not total capcasin. Your mixture tops off at whatever the carolina reaper is

      Yeah, you are correct, 100% that’s not how Scoville units work, adding those weaker chillies, the onion & vinegar all would have actually decreased the overall Scoville, quite a screw up on their behalf really, but it would have been tricky to calculate the Scoville without sending it to a lab, especially considering how much each individual chilli can vary, I would guess it would actually be considerably less then the Scoville ratting of the hottest chilli added, so no where near their claimed 10+M, surprised to not see anyone else pointing it out, so far have only seen your comment on the subject
      However, I would imagine it would still be incredibly spicy 😂

    you guys should do more videos like this where leo and angel make food and do experiments on guga. do a couple of pranks here and there, but overall these guys proved that they can cook almost as good if not as good as guga.

    Fun fact: the seed is not what makes the pepper spicy, it's the membrane that surrounds the seeds, and bread doesn't work as a food to stop the spice, you should eat it before you eat spicy food to line your stomach and avoid heart burns.
    And I'm noiit sure scovilles add up like that lol

    Also Scoville is a subjective unit which is why the range is so big. BUT it lets you know the "ballpark" you are in lol.

      Scoville is now measured using concentration in (edited) parts per million.
      That's why Scoville can go that high. The name remained even after the method changed.
      The name of the moder method is quantification by hplc

    Scoville is a measurement of the ratio of sugar water needed to chemically neutralized the capsaicin. So if you want to raise the scoville you (1) remove the light weight peppers, (2) cook out any water to that you are left with more capsaicin

    I guess because I have always seen them seated, I had not realized how much taller Leo is than Angel.
    The Scoville scale is not additive; you can't just add the Scoville scores of the ingredients to get the score of the product. The score is proportional of capsaicin concentration, with 16 million being pure capsaicin. So the score is basically calculated as: capsaicin mass/total mass * 16 000 000. Mixing, say Jalapeno (5 000) with Scotch Bonnet (350 000) will actually give a score between the two, depending on how much of each ingredient is used; you can never go above that the heat of the hottest pepper. So that sauce at the end could not be above the 2.2 million Scovilles of the Reaper.

    Capsaicin, which is the chemical compound that contains fiery heat, is actually concentrated in the inner white pith or rib of the chile pepper. While the seeds may be coated with some of the capsaicin since they're in contact with the rib, they themselves don't actually contain any heat.
