I just made this - its heavenly! 😍 So good, I can't stop smiling! The meat is incredibly tender and the sauce is very spicy and tangy. Just perfect. The chicken breast was still a little pink on the inside, so I just cut out the inner part and let it rest for a few minutes on the baking dish which was still hot. 😊 Thanks Marion!
The marinade was perfect. I didn’t get the caramelization that you did, mine was really runny. Next time I will not hVe the foil so air tight. I am so happy to have found all these amazing recipes. Counting the days for the mail order deliveries to start.

I have a rubber mallet for kitchen use only, and use it to smash anything like garlic, nuts or to cut through the bone of chicken and fish. Works great. Lovely recipe Marion, as always. Still can’t find all your sauces in Countdown.
I made this for dinner tonight and it was easy and delicious!!! I baked my chicken at 350F for 40mins then under broiler for 7mins and came out great! The sauce can probably go on anything. Will definitely make again😁 Thanks for great recipe!!!

Do I have to use sugar at all in this? My partner can tell if I put brown sugar in anything and he goes on to tell me how much he hates sweet tasting food, drives me nuts. I may just use half and see how I go..

Aw thank you! Because the chicken is spatchcocked it cooks much faster than a whole chicken. But it will of course depend on the size of your chicken. Always best to test by inserting a knife into the thigh area. When the juices run clear, the chicken is cooked :-)
oops the tamarind not a paste guess i have to jimmy on down to the recipe page to check. hopefully i can use my standard tamarind paste because i wouldnt know where to find a pink looking tamarand liquid anywhere.
At home we always eat this with papaya salad and sticky rice 🍚 😋 🇹🇭

You can use it. Just prepare it more like hers. It will be fine, possibly better.
Just add boiling water to whatever amount of paste you are using in a 2:1 (water to paste) ratio
