      They're laughing at the innuendo - "it was I who stepped on your dress, the skirts all came off I confess, revealing for all of the others to see, just what it was that endeared you to me" - ie now that you're naked, the reason I like you is visible.

Going from an already vernacular term for a sausage to an even more colloqial word for a penis is a very far stretch (the reason the word wiener exists in english at all is because they are called Wiener in German), and frankly way below the standarts of comedy I'd expect from Tom Lehrer. On top of that, it is a Viennese Waltz, and Wiener Schnitzel is an actual type of food, too.

    Only he couls do a rhyme like "Quite Rudolf Friml-y" and get away with it!
    (Rudolf Friml was a composer, whose music tended to the gentle lyrical.)

      Tom Lehrer is still alive. He’s 95 years old and still as silly as ever (probably he’s not very public)

      ​@@lopc9791 it's a breaded veal (baby cow) dish from Vienna. The being said Wiener is a common euphemism for sausage and *ahem* things that kinda look like sausage, so a lot of people take the implication of the song to be that the singer's date is, in fact, a guy.

      @@lopc9791 Wien (pronounced Veen to an English-speaker) is German for Vienna; a schnitzel is a cutlet of meat. A Wiener Schitzel is a cutlet, of veal, prepared in the Viennese manner (coated in breadcrumbs, in/with the appropriate sauce); more commonly known (or at least referred to as such) in USA than UK.
      Tom Lehrer inserted the "Schnitzel" for comic effect; the expression is more usually "Viennese Waltz", the type of melodious and often romantic waltz (typified by the Strausses, Léhar, Friml, and so on), often played at romantic evenings for couples to dance to, and of which Tom's composition here, apart from the comic words!, is an excellent example.
