  • This cold noodle recipe packs a surprising punch, with its tender poached chicken, crunchy greens and a delicious nutty sesame dressing. Putting it out there: cold noodles have SO much going for them. Here, I’ve used them in an utterly alluring dish, which teeters on the verge of an Asian salad. There is so much bounce and freshness going on in this bowl, that one bite totally takes me to a happy place. And that dressing! Yikes, it’s good, with its nutty, toasty, sesame flavours. I also love that this is a recipe the whole family can get behind - let everyone mix theirs at the table how they like it, leaving anything challenging out. You could also throw in some shelled edamames or shredded cabbage to up the vegetable count.

    OMG Marion!! I made this with tahini, soba noodles, shrimp, cucumber, green onion, and bell pepper... WOW! Absolutely stunning! The leftovers are amazing as well the next day.

    I just made this… with the ingredients I had in my cupboard and it came out amazing! I did not have the sesame paste, but I substituted with peanut butter and a generous amount of sesame oil and it’s delish!

    I first tried cold noodles at an awesome Chinese restaurant in Atlanta called Goodluck Gourmet, and the grip cold noodles as a dish now have on me is ridiculous. Any time I'm craving Chinese, I look for if any of the restaurants have a cold noodle dish. They are a simply a class of their own.
    Also, Marion's little chuckle after calling her own dish "it's an actual triumph" is just 😭😭😭

    Aside from how delicious all of your recipes are, I'm always impressed by how you manage to cook *and* eat the food without getting any of it on your white shirts. You must have a Tide pen laying around in case of accidents! LOL

    This recipe looks perfect for a hot summer day, I think it would also work with a rotisserie chicken if it is too hot to heat up the stove. I have already made my shopping list for the week with the ingredients.

    I LOVE cold sesame noodles, when at least half decent..... yours look delicious. Most Chinese restaurants here in the States do not put much thought or attention to creating a mix of different yet complementary textures and tastes like you do. Some make watery peanut butter topping, with no other ingredients. I have found a small handful that make a flavorful sauce of sesame and peanut butter, with the types of toppings you include.

      I wondered about that too. Sesame seeds and peanut butter. I would try it and see. How could it hurt?

      Not really! Chinese sesame paste is roasted and has a deep aroma whereas tahini is raw and can be bitter sometimes :)

    Good grief! Marion, you make anything you cook look so delicious. You're the best eater I've ever seen. Watching you eat something I hate would make me want that! Grrr! Actually I never liked dark meat chicken, but I'm now eating that after I saw some steamed chicken with ginger and onions you made that I drooled over. I'm going to make steamed thighs with ginger matchsticks, onion wedges, broccoli and perhaps some potato wedges or maybe rice instead. I don't have what I need to make your dish, but I'm going to see if I can get mine to produce that gorgeous, slurpy juice yours had. Oh and when I marinate the thighs before steaming, I'll add a little sesame oil to them. It's a far cry from yours, but I'll use what I have and it will be good and filling! Thank you for the inspiration. After all, that's what cooking is all about. 💕💕💕
    Added: Okay, Marion! I made this, my version. This is all about the broth. The chicken is good, but the broth is food for the gods. It did make a slurpy broth and if I had a restaurant I would never serve it to anyone. I would slurp it all up myself. It did the most wonderful things to the broccoli and onions. I may never be the same! Thank you so much! 💕💕💕

    Thank you because I can do a sesame paste mixture but to actually put peanut butter on noodles is hard. But these people who say “why” are probably putting cream cheese on chicken.

      I just did and the result was delicious. I had the tahini in my pantry--it's a logical substitution even if it may not be exact. I enjoy Marion's innovative and fusion recipes very much. Of course, whenever possible, I shoot for the required ingredient(s), but sometimes it's not practical. I have 4 spice racks with 20 jars each (do the math) and I can tell you it's impossible to stock absolutely every single spice, for every single new recipe. The tahini worked just fine! Also--I omitted the chicken, and it was still a great noodle/veggie dish!

    hi why do you always use that kind of peanut butter? its full of oil and sugar/salt. please use 100% natural peanut butter, which is only peanuts blended up without that junk.
