KILL the spaghetti 👀 - Spaghetti all'Assassina is the best!

- In this video, we're going to show you how to make the best Spaghetti all'Assassina. This recipe is a favorite among Italian food lovers, and we know you'll love it too!
Ingredients for 4:
3 cloves of garlic 🧄
2 or 3 red peppers 🌶️
a handfull of chili pepper flakes 🔥
1 pound (450 gr.) Spaghetti 🍝
25 ounces (690 gr.) Passata 🍅
1 or 2 cans tomato puree (optional) 🥫
12 ounces strained tomatos 🍅
Extra Virgin Olive Oil 🫒
Salt 🧂
Pepper 🧂
How to cook:
00:10 Add the strained tomatoes to a pan
00:17 Add the same amount of water
00:27 Add tomato puree (optional)
01:25 Add a pinch of salt
01:39 Stir well
02:39 Bring to boil on high heat
04:54 When boiling, keep boiling on lower heat
02:44 Crush 3 gloves of garlic, finely chop 1
03:53 Slice the peppers
05:05 Add a generous amount of olive oil to an already heated pan on medium/ high heat
05:30 When it's hot, add the garlic and peppers
05:48 Add a good amount of chili flakes
06:08 Let it cook for 2 or 3 minutes
06:24 Add the passata and mix well
07:15 Let it cook for 2 or 3 minutes
07:28 Add the spaghetti and cover it with sauce
08:09 The do nothing
08:09 Let it cook until the spaghetti starts to stick to the bottom
08:23 When it does, turn and repeat
08:33 It's ok if it looks a bit burnt, that's exactly what we want
09:09 Turn again when the sauce is thickened
09:20 Scrape the bits from the bottom, we want that in out spaghetti
09:25 Remove the garlic gloves
10:26 Add the sauce to the spaghetti and do nothing
10:55 Wait for the sauce to be absorbed or the moisture to be evaporated
11:02 Taste and add salt / pepper if needed
12:11 Again add sauce and repeat
14:25 Finish 'till the past drop
15:34 Let it fry again so the spaghetti caramelizes well
16:25 All done!
16:35 Enjoy!

I just prepared this recipe for the first time. To tell the truth I was doubtful, even though it's obviously a winner. All that olive oil and liquid ( passata with water), but I was very wrong. This was delicious and utterly unique. The texture and the flavor were amazing. Cleanup was something else too, ha, but worth it.

Never in a million years would I have thought to cook spaghetti like that, But I like to try different things and that is something I would definetly try. The end result looks delicious, it looks like something that I would have come up with 🤣🤣 I love meat too so I will try it with ground beef for sure!!! Thanks guy 👍🏽

It is now one of the favorites in our house. Now that I've prepared it a few times, I can say that it gets even better if you keep the 2nd sauce watery and thin.

A frying pan. It’s the only pan I had that the spaghetti fits in but it does the job perfectly.

@@douggolde7582 No, it's a steel one. Best use a cast-iron pan if you have one. But teflon won't do the trick because it will not burn the spaghetti enough, as far as I know.
@@great.recipes.for.dinner Thanks. I'm definitely going to try this. I think stainless steel is the way to go. Tomato sauce would strip the seasoning off cast iron or carbon steel.
End result looks great....but using a grill pan is looking tedious.

The pasta definitely needs to BURN more. This is more like a thick sauce.
Yes, you're right. I went a bit overboard with the tomato sauce. The 2nd sauce could be thinner, although the flavor is still great.
Have an extinguisher ready at hand.

Aren't "passata" and "Strained Tomatoes" the same thing?
Hi Lee, strained tomatoes and passata are quite similar. Passata is a type of strained tomato sauce that's been lightly cooked and strained to remove seeds and skins. So, while they're not exactly the same, the terms are often used interchangeably in cooking.
This looks beautiful and the process is awesome...however, I can feel my butthole burning just looking at this dish!! lol :D Does it HAVE to be so spicy? I mean, for the full effect? I love all these ingredients. I just can't imagine dealing with all those dry chili flakes. Anyhoo, great video. Thanks for posting. :) I'm sure it's a wonderful dish. :)
😊 You can leave out the chili flakes or most of it. But it has to be a bit spicy so I would at least use the red peppers. If you tried it let me know if you liked it!
You missed the whole point of the assassina, and that is to FRY THE DRY PASTA IN THE OIL, GARLIC, AND CHILI FLAKES FIRST until it is caramelized. I'm sure your recipe tastes good, but a true spaghetti alla' assassina? Not like in Italy.
Thank you for the tip, I’ll surely give it a try. I’ve seen a number of vids on how this spaghetti is prepared and they are mostly different in one way or the other. This way appealed to me most. Maybe there are several variations how to cook this?

Actually I have cooked tomato based pasta dishes very much like yours in the past and they were really good, but I had an assassina in Palermo years ago and it was cooked at the table, from a young chef who learned it from an old master chef, fried the dry pasta in oil and the herbs until it was dark brown crispy(!), then added a mixture of pasta water and tomato sauce and paste, until the pasta was aldente, then towards the end, dosed it with a scoop of the regular tomato paste until it was thick, and served it up. You could see a bit of black carbonization in it, but the flavors were amazing.
