    I bought the Ironwood XL today after seeing this video. It has been delivered and I’ve set it up and done the original 60 minute burn in. Tomorrow? Beer Can Chicken. Happy July 4th from Virginia!

      @@embersliving I've since gone on to perfect the Texas Style Beef Brisket. I tried the first one out on my family, and have now done two at a time twice for a restaurant up the street! They’ve served my brisket as a special twice now, and sold out the first night. They have two more in the walk-in for me to cook next week. Yeah, it takes all night but I'm proud of the product and their customers keep asking. So why not? My wife now is convinced I'm nuts…

    You're right. I have the Timberline XL because I needed a new smoker before having a lot of family over for Thanksgiving (4 turkeys- 2 smoked, 1 smoked then fried, 1 fried... The 1/2 smoked 1/2 fried was best) and the Ironwood wasn't released yet. I have an old Webber Summit for a gas grill (I'll try the Nepolean next time) so if I were to do it today I would get the Ironwood XL and the Flatrock.
    As for the Meater probes, I find my Meater Block still has better functionality than the probes that came with my Timberline XL. Unfortunately, they don't pair with each other. The block uses the Meater app and the ones that came with the Traeger use the Traeger app.
    The only time I've used the induction burner was to test it out when I first got the smoker. I sear on the gas grill as it's easier and less messy with splatter.

    Traeger is coming out with a induction unit for the Ironwood sometime this year, and it plugs into the extra outlet on the back next to the power cord. I own a Ironwood XL and love it using it 4-5 times a week.

      Talked to Traeger and the induction unit from what I was told you are talking $1,000 to add it. At that price should just buy the timberline.

    I have three Traeger’s, portable, Buddy and Texas. I put an induction burner on the table for searing.

    I am totally with you on the extra gas grill. Most people that don't get a Traeger find some little thing and then that becomes a sticking point. No gas grill drives wood flavor to the bone. Before the Traeger, you had to marinate everything to get flavor into the meat. I'm not a fan of smoked vegetables. I have my vegetables on the gas grill and the meat on the Traeger that could be seared on the gas grill if I want. Power outage? Gas grill picks up the work, or I have an offset.
    If you really don't have the space for a gas grill, just get a cast iron frying pan and heat the heck out of it in the oven and sear the meat off the Traeger. When the meat is hot it will sear 10 times faster. This is not an exaggeration. 30 seconds in a hot pan can burn a steak that is near done.

    I am more timberline xl because the 3rd shelf and like u said its good as a out door kitchen

    I just upgraded from a 5 year old treager to a ironwood 885. The home depot had one right inside the front door already assembled and had it marked down to $800 I couldn't pass it up. It is the older version ironwood so I'm guessing they marked it down because of the newer one's coming in the store. I'm still going to keep my old one but can't wait to do some cook's with super smoke.

    You forgot to mention the the belly of the ironwood is not double insulated like in the timber

    Good review and comparison. And agree with you that if you have the space, multiple grills are the way to go. For someone just trying to close the searing gap I’d probably go with something like the Otto Grill (salamander). The Napoleon you recommended would be a great choice for someone who wants an option that sear almost as well but also do a lot more.

    Lol. Funny enough I run a Ironwood 650 and the Napoleon prestige 500. Perfect pair to cook anything at home.
    No way I'd pay that much for the newest version.

    What charcoal grill would you pair with the Ironwood XL? It seems the Timberline XL just isn't worth the cost and I do enjoy a charcoal taste here and again.

    Did you mention total grill capacity in sq inches? I heard you talk about how many chickens were crossing the road….but having 3 racks on the Timberline will definitely be a boost for to help a person accept almost $4k for a grill.

    Does the Timberline procure a better end cook than the Ironwood, given the double insulation? Does it smoke the food better? I'm thinking once the side burner accessory for the Ironwood comes out, they will likely drop the price on the Timberline a bit.

    Instead of the Napoleon, couldn't you also get the Timberline and Flatrock to solve the searing issue and then have a full flat top grill?

    Will the stainless cooking grates from the timberline XL fit the ironwood XL? I just bought the ironwood xl but I want the stainless steel grates from the timberline xl.

    Do you not sell yoders? I would think the ys640 s that has the ability to sear, smoke, make pizzas in the pizza accessory with stone would be another good option as it's cheaper than the timberline xl, not as much cooking real-estate.

    I'm wondering if someone could buy the Ironwood, get the Meater X probes (which are listed to work with the Ironwood and Timberline both), wait for the induction cooktop to be sold as an addon for the new P.A.L. shelf system on the Ironwood (hence that mysterious plug in the back), and then buy replacement stainless steel grill grates from the Timberline (not sure if those are for sale anywhere yet). If you did that, is there really any difference between the Ironwood and Timberline other than a third shelf and double-wall insulation? Does the double-wall insulation matter that much if you're in a mild climate like California? The Ironwood XL gives you more cooking space than the regular Timberline at the cost of taking up more physical space (it's a foot longer), but otherwise...
    What do you think?
    1) Meater X probes ($230 on the Traeger website)
    2) Induction cooktop accessory (price unknown, only rumored at this point)
    3) Stainless steel replacements grill grates (unsure if available anywere, could go aftermarket)
    4) Third shelf (slightly more cooking area)
    5) Double-wall insulation
    Is there anything else that separates the Ironwood from the Timberline at a $1,500-1,800 difference in price?

      Oh, and the bamboo cutting board + storage space are minor differences but if you already have a good cutting board and don't have to deal with crazy weather or have other storage options, those aren't a big deal.

    I have a Kamado Joe and a Weber Genesis II. I use my Weber side burner all the time when using my Kamado - great suggestion. At 3k I’m looking at on offset like a Yoder.

    Saw one of the ironwoods in the store. Has anyone tested that female plug in the back to see if AC power is there? If so a small induction burner would easily plug in.
    Also I have the Costco century Traeger as well as the Napoleon will smoke chicken wings or steaks and even burgers then hello sear station or super hot main chamber for the finish.

    I think the timberline and the ironwood is way too expensive considering you could buy something like a pitt sand spitts or a Yoder Smoker for around that $2000 - $2500 and those will sear a steak because you can expose the fire pot ans cook over it on them.

    What a true salesman buy two grills instead of one and don’t save $1800 lol. pretty good pitch, but also what people don’t realize is you can get a cast iron square pan to go in the Traeger and that’s gonna help with the searing at full temp and you can add butter and herbs too!!

    Induction burners are under $100 to buy, Traeger adds one and the price goes to the freakin moon!

    Definitely not worth the price of the timberline for the average person. I anticipate the price will go down cause the value just isnt there.
