  • What is Chaya? Here is the definition from Wikipedia:
    "Cnidoscolus aconitifolius, commonly known as chaya or tree spinach, is a large, fast-growing leafy perennial shrub that is believed to have originated in the Yucatán Peninsula of Mexico.[3] The specific epithet, aconitifolius, means "Aconitum-like leaves". It has succulent stems which exude a milky sap when cut. It can grow to be 6 meters tall, but is usually pruned to about 2 m for easier leaf harvest. It is a popular leaf vegetable in Mexican and Central American cuisines, similar to spinach. The leaves should be cooked before being eaten, as the raw leaves contain a high content of toxic hydrocyanic acid. Up to 5 raw leaves can be eaten a day. To be safely eaten, the required cooking time is 5-15 minutes"
    For me it is a wonderful shrub that keeps giving me leafy greens year after year. We have cooked the leaves to put in soups and also cooked and dried them to make powder. How do YOU eat Chaya?

    oh I'm so glad you are using chaya. it has really important properties when I use it my grandma allisana told me bold water add chaya leaves no stems, turn the stove to 2.5 lol wait 10 mins, drain. add honey and a little but of maple syrup, no suger, lemon, or orange slice and drink warm but I like mine chilled a little. hope u enjoy. my grandmother is full Cherokee Native. this helps flush out toxins and lowers cholesterol also improves eye sight in 3 months with everyday drinking, and heals any cyst in the body after three months aswell. hope u enjoy let me know. I'd love a plant stem.

    Nice video! Thank you for sharing. Chaya plants grow well in Thailand, too. I cook the young leaves (which are a little tough & chewy, ... so, forget about the mature leaves) quite often, mostly for stir-fry dishes. What I would like to add and assure you of is that the top of the stem is also edible and even more delicious than the young leaves. The part that's about 2 inches from the top can be wholly eaten (after cooked, for sure), and two or three inches below that could be enjoyed after the tough skin is removed or peeled.

    When I visit the Yucatan (where it's native), they use Chaya (ch-eye-ya) in aquas frescas which are essentially smoothies or watered down drinks. Once you cook it, its very versatile. Id even use it to feed the chickens. The nutrition of the leaves are pretty amazing. Keep up the good work!

    When I was young our Grandparents would spot something they called poke salad that would grow wild here in Arkansas. I remember them telling us to not to eat it until it was cooked well and until the foam on the top while they boiled it was gone. Seems like they ate it with eggs. I never ate it but I was always jumping out of the car to pick it for them when they would spot a patch growing off the side of the road Wonder if it is anything like Chaya?

    thanks. Today I trimmed back one of my chaya and spread them about our property. i like your idea of the stick pre-drilling the hole for the root to go into and taking the leaves off.
    I just shoved them in the ground and didn't strip the leaves. We had a big wind storm and some aren't too firm so I"ll follow your idea and make sure they are deeper in the ground.

    Your son is a awesome helper! I've been told to leave 1/3 of the greenery on a plant when you prune it, because that is where the plant gets the energy from. Also, when you trim always make a angle cut on the branch and it's less likely to get anything festering on the flat surface of a fresh cut. Anyway, I loved your video and would like to know what you came up with for chaya? I think it would be good in a omelet or quiche, with a bit of fresh onion and garden tomatoes.Yummy!

    nice vid. Apparently there are many regional varieties of the same, in Costa Rica we have Chicasquil, look for "recipe picadillo de chicasquil" classic CR cooking. Also common is the one you have called chaya (tchaya), because kaya is something in English already

  • @danieldzul5732
    @danieldzul5732 6 ปีที่แล้ว +1

    You should not touch the Chaya leaves without care. They have little hairs that cause irritation of the skin at the base of the leaf near the stem that connects them to the main trunk. At least the ones here from Yucatan are like that maybe you have a different variety?.
    The trunk should be safe to handle.
    To collect leaves grab the tip of the leaf and use a knife to cut about 2 cm from the base of the leaf. If you look carefully you should be able to see the hairs so you know where to cut.

    • @daddykirbs
      @daddykirbs  6 ปีที่แล้ว

      I appreciate the warning. I suspect that we have a slightly different variety because I've never noticed any hairs.

    • @Braddha
      @Braddha 6 ปีที่แล้ว +1

      That's correct Blake... There are four - or perhaps five types of Chaya - but usually only two kinds are found in the U.S... The one shown in your video does not have any irritating hairs. We have been growing Chaya very successfully here in Hawai'i for several years. It has a reputation of being helpful for diabetes sufferers - bringing down blood sugar levels... I have a number of customers who have had good results in this regard... Unfortunately it will not grow very well outside the tropics.

    I love this generous perennial, so easy and nutritious! The flashing text made me curious...I've heard chaya pronounced as "chi-yah" and "chay-ah" but not with the hard "k" sound in "ky-yah", is is regional?
    I now have a slew of plants from cuttings, but in the beginning when leaves were scarce, I would even use the old tough leaves by roughly chopping and adding to some water in my blender to break them down first, since I didn't have a food processor. It works great to shorten the lengthy cooking time needed to make them chew-able! I had the wild stinging variety originally but recently got one like yours, so can't wait to try the newbie to compare. Sure will be nice not to have to don the gloves when harvesting if nothing else! Moringa is another nutritional powerhouse that is more than easy to grow, but the taste is a bit stronger.

    When Im visiting the Yucatan (where the Chaya plant is native) they use it alot in aguas frescas. Chaya con Piña is my favorite. You could also use it in scrambled eggs... Any place youd use cooked spinach.
